That is how I feel about a lot in my life. Why is it every time I got into a store I always see “new and improved!” Why do they do that? Sometimes things are great just the way they are. No new, no improvement. That is how I feel about this recipe. It’s a classic recipe that until three years ago I never had or heard of. Two months after I started dating my boyfriend his sister got married. I had not yet met most of the family so needless to say it was a bit overwhelming. Everyone wanted to know who I was and I asked tons of questions, but all in all it was a great night. Lots of eating, dancing and gin drinking Ok, now to my point. At this lovely family gathering was where I met my boyfriends grandmother and grandfather. Unfortunately his grandmother has since passed but she is the one I get this recipe from. She was one of the sweetest women I have ever met and I know she is missed a lot by her family. Now I know that this recipe is technically for BSI but it’s also a tribute to a great women. I hope everyone finds this recipe as great as I do. It’s got the hardiness of a stuffing with the great taste of corn and broccoli…yummy! Now I think it’s just great the way it is but it’s also really good with added chopped cooked chicken. Enjoy!!!
Broccoli Corn Casserole:
1 10 oz. packages chopped frozen broccoli
1 can cream corn
1 can corn
8oz. dry stuffing
1 stick butter – melted
1 egg – slightly beaten
Melt stick of butter and pour over dry stuffing. Mix well and set aside.
Cook broccoli just until defrosted and drain water.
Drain water from corn.
Mix broccoli, cream corn, corn, egg and stuffing together.
Put in buttered 9×13 pan, cover and cook for 30 minutes.
