Ok ladies. I gotta confess something. I love “The Bachelor”…I know. It’s pathetic to admit but I absolutely cannot get enough of this show. It’s only the second episode and I’m already picking favorites. Does anyone else watch? Come on…you can admit it. This is safe place where you can feel free to admit all that is the truth 🙂

I also want to point out how much of a crazy women Michelle is. I swear she is freaking boil the bunny crazy. On the first episode she was talking one on one with the camera and all intense she says “it will kill me if I do not get the first impression rose.” Ummmm ok crazy. Last night was the second episode and she didn’t let me down, she was still on the crazy train. She threatens to pack her stuff and leave because she has not yet gotten a date with Jake. Of course some of the girls try to talk her out of it, which I don’t get, it’s a competition for one man. If one of the girls wants to leave help them pack their bags and show them out the door.

Oh and one more thing. Elizabeth, the nanny, wrote him a letter…hahahahaha. Who does this. Is this first grade? Then she tells him “don’t kiss me unless it means forever.” I mean seriously. I get that you should be serious about wanting a relationship but should you come off that desperate? Then again that is pretty much the theme of the show. Now this is officially that last* thing I will mention about the Bachelor. I have read a lot of information about the Rozyln scandal and I’m not feeling so bad about her now. I think there was a lot of implying and not a lot of proof in the shows accusations.  Also why did there need to be a guard standing by as she packed her bag? Did they worry she would steal the linens?

Ok I’m so sorry loyal readers. I just had to get all of that off my chest. I cannot talk to Mr.Nutmeg Nanny about this. He would just laugh. He finds most everything funny. Including most of my drama filled Lifetime movies I watch.

I guess I should reward you all for listening to my ramblings by providing you with a tasty recipe. These cookies came from my Martha Stewart Cookies book and are very tasty indeed. I made my own applesauce for the cookies but jarred would work equally as fine. Enjoy!!!

Iced Oatmeal Applesauce Cookies

These fall inspired iced oatmeal applesauce cookies are the perfect addition to your snack table. Super moist and packed full of sweet apple flavor.

Cook Time: 15 minutes per batch

Total Time: 35 minutes

Ingredients:

For Cookies:

  • 4 tablespoons unsalted butter - melted
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup chunky-style applesauce
  • 1-1/2 cup old-fashioned rolled oats
  • 1-1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon coarse salt
  • 1 cup golden raisins

For Icing:

  • 1-3/4 cup confectioners sugar
  • 3 tablespoons pure maple syrup
  • 3 tablespoons water

Directions:

For Cookies:
Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.

Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies until golden and just set, 13 to 15 minutes. Let cool on sheets 5 minutes. Transfer cookies to a wire rack set over parchment paper; let cool completely.

For Icing:
Whisk confectioners sugar, syrup, and 3 tablespoons water until smooth. Drizzle over cookies, let set.
