One Year Ago: Fresh Raspberry Truffles
The other day I ran to Target to grab a few things. As I stood in line (impatiently…yes, I’m one of those people) I spied something I hadn’t seen before – Hershey’s Raspberry Hugs. I knew I had to grab a bag and make something delicious out these little seasonal beauties. In all honestly it wasn’t really “the other day” that I ran to Target. It was more like a month ago. I should also point out that I put this bag in my candy cabinet and forgot about it until I opened the door to my cabinet and it came tumbling out. As I looked at it laying on the floor I remembered “oh crap…I was going to use these and make something for Valentine’s Day…I should get on that!” So I thought over some ideas and decided to go with a delicious cookie that hides the little raspberry hugs inside. They are amazing. When eaten warm they are even better. Warm gooey raspberry flavored white and dark chocolate hidden inside a perfectly cooked soft cookie….what more could you ask for?
On a total random side note I would like to point out that these pictures are the first I have taken in my new light box – thanks Dad! I think the pictures look pretty good, but bear with me while I learn how to properly set up my lights.
Raspberry Hug Cookies:
1 bag (9 oz.) Hershey Raspberry Hugs
1 c. (2 sticks) butter – softened
1/3 c. sugar
1/3 c. brown sugar
1 tsp. vanilla
Couple drops of red food coloring
2 c. flour
Chocolate Drizzle
Heat oven to 375 degrees. Remove wrappers from hugs.
Beat butter, sugar, brown sugar and vanilla in large bowl until well blended. Add the red food coloring until you have reached the desired red color. Add flour to butter mixture; blend until smooth. Mold scant tablespoon dough around each Kiss, covering completely. Shape into balls; place on ungreased cookie sheet.
Bake 10-12 minutes or until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Prepare chocolate drizzle, if desired. Drizzle over each cookie

Ooh, I haven’t seen the Raspberry Hugs yet either. GREAT idea. I always look for the latest candies. Problem is, Target isn’t that close to me, so I don’t get there often enough.

I love those raspberry hugs – and did have some at my desk at work – but put them in the other assistant’s candy dish because I couldn’t stop eating them. I am sure I would love these cookies!

Target is a dangerous place. I always come out of there with many varieties of Hershey’s kisses…most of which I just end up eating.

I haven’t seen the raspberry hug candies…but raspberry hug cookies sound even better. And something about making something with the word ‘hug’ in the title – seems a bit magical.
Target carries absolutely the neatest candies! You can’t get them anyplace else most of the time. These little cookies are adorable and I love the red food coloring for V day. Such a cute name for a great invention!

I bought some of these raspberry hugs too and have been wondering what to do with them other than just eating them as they are. And they really are good, so I just know they are going to be awesome in these cookies.
