Mango Salsa Chicken

This mango salsa chicken combined fresh grilled chicken and tops it with a homemade mango salsa. It’s packed with mango, pepper, cilantro and lime.

The other day I walked into the grocery store and saw a huge crate of fresh mangoes. I was immediately inspired to make something delicious. I took them home (Don’t worry, I paid for them) let them ripen and decided their destiny would be in the form of fresh salsa. Was it delicious? Heck yeah, it was! It was perfect on top of the chicken and even better when mixed in with the brown rice I served on the side.

Since I’m horrible at recipe development you with have to deal with the fact that I didn’t really measure anything for this recipe. I apologize. However, in my defense, you don’t really need to measure. This meal is all about personal taste. If you don’t like cilantro don’t add it. Not a fan of red onion? That’s cool. Make everything to your taste. I will give you the idea, you make it personalized for yourself and your family.

I threw my chicken on the grill because who doesn’t love grilled chicken? BUT you could always just throw in a pan for a quick way of cooking if you’re short on time or don’t own a grill. Oh, also feel free to use as much or little seasoning on the chicken. This recipe is all about customization and SO EASY to turn into exactly what you want. Now, get your grill ready and prepare to dive in!

Mango Salsa Chicken

This mango salsa chicken combined fresh grilled chicken and tops it with a homemade mango salsa. It's packed with mango, pepper, cilantro and lime.

Prep Time: 15 minutesplus marinade time

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

For chicken:

  • 8 chicken breast tenders (not the breaded stuff, the raw stuff)
  • 1 tablespoon Badia Sazon Tropical seasoning for meat, poultry and fish
  • 1/2 lime, juiced
  • Olive oil - enough to lightly coat the chicken

For mango salsa:

  • 1 large ripe mango, peeled and cubed
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 2 tablespoon finely minced cilantro
  • 1/2 lime, juiced
  • Fresh crack of pepper
  • Pinch of salt

Directions:

For Chicken:
Add chicken breast, seasoning, lime juice and olive oil to a large zip top plastic bag. Marinade for for up to 8 hours. (Marinading is optional. You can also prepare the chicken and let it sit in the marinade while you make the salsa)

Take chicken out of marinade and put directly onto grill. Throw away leftover marinade. Grill on outdoor or inside grill. Once cooked top with mango salsa.

For Salsa:
Combine all ingredients and let flavors meld together in the fridge. I like to make my salsa in the morning so it's nice and flavorful by dinner.
