The other day I was at the store and I saw something I had not seen before – Peepsters. They are made by the same company that makes Peeps but these little gems are dark chocolate candies with marshmallow cream in the center. Ummm…..I could not pass that up! I figured they would be delicious to snack on (of course) and even better if they were stuffed in a cookie. Seriously, what’s not great stuffed in a cookie? Well….maybe snails. That wouldn’t be appetizing. Let’s not think about that. It’s gross. Back to candy. I made a simple chocolate chip cookie dough but left out the chips (which you could add if you wanted) and stuffed a Peepster into the center instead. It was really easy and really delicious. Peepster stuffed cookies are now a new favorite in my house. You should make some too….they could become a favorite in your house too
They would also be a great addition to your Easter dessert table….Enjoy!!!
Peepster Stuffed Cookies:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter – softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 bag Peep Peepsters
White chocolate (optional)
Preheat oven to 375° F.
Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture until combined. Using a 1 1/2 tablespoon cookie scoop, scoop dough and push Peepster inside dough. Gently cover the bottom of the Peepster with the dough from the edges and roll into smooth ball.
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Drizzle or dip with white chocolate if desired.

I love those little things! My DIL gave me one to try when we were visiting home the last time. They weren’t what I expected – I thought the center would be more marshmallow-y but they were yummy! Great cookie!

Ooh these sound great… very similar to rolo cookies, but a marshmalllow surprise instead of caramel. Yum!

oh my gosh- what a cute idea! I’ve never heard of peepsters! I was a peep fanatic for SO long…but one year I ate too many and haven’t been able to go back to them since. But marshmallow cream? I’m in! Perfect!

I’m thinking this calls for a trip to the store! I’ve never heard of peepsters and I refuse to live another day without them! The cookies sound delicious!

I was just talking to David at a peep’s store, it is where they are sold in an official Just Born store (they are expanding, slowly) anyway, I was ordering Peeps pops, which are basically peeps on a stick for easter and he said that peepers are sold year round but only seasonly in say walmart or CVS. So if these are as good as they look, you might want to buy some now and freeze. They do sell them by mail order….but to get them now and freeze!
What a great idea, I’ll have to look for peepsters when we’re shopping tomorrow!!

I bet those were good! I’ve never seen that candy either but maybe I’lll see some on clearance now that Easter is over!
I have never heard of Peepsters! I will have to keep my eye out during Easter and try them! The cookies look really good!!
