Hello Nutmeg Nanny Fans,

My name is Peabody (yes my first name…yes, my parents are cruel 😛 ). I run the website Culinary Concoctions by Peabody.

I’m captain of my men’s recreational ice hockey team (we have two other girls on the team as well…we make it a co-ed league) and spend most of my time either skating or baking.

Other than that I’m most known for my love of Mascarpone Cheese, bacon, Funfetti (me and Ms. How Sweet It Is compete for our love of Funfetti), and my sometimes very outspoken blog posts.

I’m a realist with a side of optimism and truly believe that life is what you make of it.

Let’s take these brownies for instance.

These are rocky road brownies, though not just any kind of brownie…they are Rocky Road Brownies with Funfetti Marshmallows, because when life gives you bumps you should even enjoy those too.

If you play the victim you are the victim.

If you think this is just a bump and I can so get over this, you so will get over this.

When I taught school the sign above my desk used to read “Life is 10% what happens to you and 90% how you react to it” and I live by those words today.

These are pretty much your basic brownie, if you aren’t a fan of Funfetti or don’t want to take the time to make your own marshmallows feel free to just use any marshmallows and maybe throw some sprinkles on there for good measure.

But don’t pass on the sprinkles as they just make food more fun.

And who can’t use a little more fun in their lives.

Just want to say a big congrats to Brandy on her engagement…let there be many sprinkles and many celebrations to come!

Funfetti Rocky Road Brownies

Ingredients

  • 4 ounces unsweetened chocolate chopped finely
  • 8 tablespoons unsalted butter cut into small pieces
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup walnuts
  • 1/3 cup semisweet chocolate chips
  • About 30 mini marshmallows or chopped up Funfetti Marshmallows recipe here
  • Sprinkles if not using Funfetti marshmallows

Instructions

  • Preheat oven to 325 degrees F.
  • In a medium saucepan over low heat, melt the butter and unsweetened chocolate, stirring often.
  • Remove from the heat and stir in the sugar, then the eggs and the vanilla.
  • Mix in the flour.
  • Scrap the batter into a prepared 8-inch pan (sprayed with baking spray); smooth the top, sprinkle chocolate chips and walnuts on top. Bake for 25 minutes.
  • Right when brownies come out press the marshmallows and allow them to melt into the brownies. Put as many or as little as you like. Let cool on a wire rack.
  • These brownies are more like flourless cake and are nice and dense.
