The other day I was shopping for groceries and saw the most beautiful head of orange cauliflower. I know that is an odd statement, however, it’s totally true. It looked so fresh and beautiful. It had to be bought.
There was one bad thing about this plan. Mr. Nutmeg Nanny hates cauliflower. Yep. Hates it. I guess I can’t really complain though. This is the only food he has ever mentioned not liking. That’s not so bad.
I wanted to keep the recipe simple and just showcase the amazing flavor of fresh cauliflower. I drizzled it with some olive oil and lightly sprinkled it with salt and pepper. I roasted it on high heat and in no time it was ready to devour. Even Mr. Nutmeg Nanny ate some 🙂
Oh and here is your fun fact of the day. Orange cauliflower contains 25 times the level of vitamin A than white varieties.
Roasted Orange Cauliflower

Cook Time: 30 minutes
Total Time: 40 minutes
- 1 head of orange cauliflower (About 3 lbs)
- 2 tablespoons olive oil
- Kosher salt and pepper (to taste)

Preheat oven to 450 degrees.
Cut off florets and wash thoroughly. Drizzle with olive oil and season with salt and pepper.
Cook until golden brown 25-30 minutes. In the middle of cooking make sure to stir once.
