Edamame Garlic Scape Hummus

This edamame garlic scape hummus is crazy delicious and perfect for all those spring garlic scapes. Perfect for dipping with vegetables or pita chips.

Yesterday when I made it I could not stop eating it.  I have always had a love for hummus but this recipe is nothing like the traditional. It combines fresh steamed edamame and garlic scapes. If you’re not familiar with garlic scapes they are the tops to the garlic plant. They have a peppery garlic taste and I’m utterly obsessed. Last year I madegarlic scape pesto with them but this year I decided to try something new.

I served my “hummus” with Stacy’s pita chips (no Stacy’s did not sponsor this post. I just really like their pita chips) but I think it would also be great with soft pita bread.

This dip would also make a great addition to your summer barbecue or cookout.  It does not include any dairy products so can handle being outside. I still wouldn’t set it in the blazing sun, but then again you won’t have to worry about it being out for too long. It’s so delicious it will be gone in minutes!

Oh and a quick note about garlic scapes. They are normally found at farmers markets or local farm stores. June is the best time to start looking for them. If you can’t find garlic scapes a couple cloves of garlic will work just fine too.

Edamame Garlic Scape Hummus

This edamame garlic scape hummus is crazy delicious and perfect for all those spring garlic scapes. Perfect for dipping with vegetables or pita chips.

Yield: 1 cup dip

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

  • 8 ounces steamed edamame
  • 3 garlic scapes
  • 1/2 teaspoon coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 lemon - zest
  • 1/2 lemon - juiced
  • 2 tablespoons cashew butter
  • 1/4 cup olive oil

Directions:

In your food processor add all ingredients except the olive oil. Blend together and slowly add in olive oil through the top of the food processor. You want to make sure the hummus is spreadable and a nice dip consistency. Add more olive oil if needed.

Eat right away or store in refrigerator until ready to eat.

*Note: If you cannot find garlic scapes you can easily use a few cloves of garlic.
