Dairy Free Roasted Strawberry Shake

This vegan dairy free roasted strawberry shake is the perfect addition to your summer dessert. So sweet and fresh you won’t even miss the dairy.

Today I have two fantastic things for you to feast your eyes upon. First we will be talking about this delicious dairy free roasted strawberry shake. It was so good I didn’t even share it with my husband. Sorry babe!

Now, about this shake. First I roasted the strawberries with a little balsamic vinegar and brown sugar. Then I combined it with some So Delicious coconut milk “ice cream” and gave it a whirl in my Vitamix. To thin it out I just used some coconut milk I had sitting in the fridge. Oh. My. Word. I think strawberries are back to being my favorite fruit. Scratch that. Roasted strawberries are my new favorite fruit. Seriously. Can we just start roasting all fruit? It’s really that amazing.

{So Delicious does not know who I am and I was not paid to mention their product. I just really like it!}

I snapped a few pictures and immediately started downing this shake.  I was like a fat kid with cake – I was not going to be stopped. {Did anyone else just think of that chubby kid from the movie Matilda eating that whole chocolate cake?}

Can I just say that I’m lucky the pictures turned out because I totally finished it before I even checked. Bad food blogger!

Dairy Free Roasted Strawberry Shake

This vegan dairy free roasted strawberry shake is the perfect addition to your summer dessert. So sweet and fresh you won't even miss the dairy.

Yield: 1 shake

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 30 minutes if you need to prepare berries, 5 minutes if berries are prepared

Ingredients:

For roasted strawberries:
2 pints strawberries, tops removed and cut in half or quartered if large
3 tablespoons dark brown sugar
2 tablespoons balsamic vinegar

For shake:
1/3 cup roasted strawberries
1/2 cup dairy free coconut milk frozen dessert (I used coconut flavor)
1 teaspoon vanilla paste or 1/2 teaspoon vanilla extract (optional)
Coconut milk beverage, as much as needed

Directions:

For roasted strawberries:

Preheat oven to 375 degrees.

Add berries, sugar and balsamic vinegar to a 8x8 glass dish. Stir to combine.

Roast for about 10-15 minutes until soft but not falling apart. Let cool.

If not using right away keep in a air tight container in the refrigerator for up to 1 week...if they last that long.

For shake:

In a blender add berries, dairy free coconut milk frozen dessert and vanilla paste. Turn blender on high and add extra coconut milk beverage if needed. If you find the mixture to be too thin simply add more coconut milk frozen dessert. If it's too thick simply thin out with more coconut milk.

The shake sounds great but seriously...talking about needing to lose weight and that your bathing suit is snug is just offensive.

My bathing is a bit snug, how is that offensive? I battle with my weight and the fact that my family has a lot of weight related issues. I do not think there is anything wrong with trying to keep things under control. I'm not saying I do not make sweets, but I also like to make snacks that I find a little bit better for the waistline.

Sounds great. I'll definitely make this. But could you please avoid fat jokes? ( Like the "I was like a fat kid with cake" comment and the "chubby kid" from Matilda reference? ) I'd forward the entire page to some friends but for that.

Ooh, nice. I tried something similar last week but it was a huge failure. This looks delicious and way, way better than my sad attempt at a strawberry coconut shake! :)
