Eating at the diner is one of my favorite meals. No, it’s not fancy but the food is always delicious and usually hits whatever craving I need to fulfill. Hands down (just below the challah French toast platter) patty melts are one of my favorite diner foods. They are buttery and packed full of cheesy meaty goodness. This time around I decided to switch it up a bit and use smoked blue cheese instead of the classic Swiss cheese.

I wasn’t aware that blue cheese could even come smoked until I just saw it sitting there all lonely in the cheese section. So I threw it into my cart and figured I would figure out something to do with it when I got home. After staring into  my fridge I opted to go with a patty melt. Now, this version isn’t as stringy cheesy as the normal sandwich but it does give a nice blue cheese punch if your into that. Which I’m assuming you are if you are reading this recipe….right?

If you can’t find smoked blue cheese regular old blue cheese will work just fine, a sandwich like this isn’t picky. If you hate blue cheese then I would recommend not making this sandwich. I just feel like you will be setting yourself up for a disappointing meal. Or if you’re like me you will make the sandwich and then will yourself to like blue cheese. I have been doing this for years and I’m finally starting to really like the stuff.

Now, if I could just will myself to win the lottery. That would be awesome.

Smoked Blue Cheese Patty Melt

This smoked blue cheese patty melt is packed full of sautéed onions, smoked blue cheese, crusty sourdough bread and a perfectly cooked burger.

Yield: 4 servings

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

  • 3 tablespoons olive oil
  • 1 large yellow onion, sliced
  • Kosher salt and pepper, to taste
  • 1 pound ground beef
  • 8 slices sourdough bread
  • 8 tablespoons unsalted butter
  • 1/2 cup smoked blue cheese

Directions:

In a large skillet set over medium heat add olive oil. Once the oil is hot add in onions and season with salt and pepper to taste. Sauté on medium low heat until the onions are soft. Once soft set aside.

Divide ground beef into 4 equal bread size patties. Season with salt and pepper and fry in a skillet over medium heat. Don't fully cook just brown the outside. The burger will cook some more as you are grilling the sandwich. Set patties aside.

Lay out the bread and butter one side with 1 tablespoons butter. Flip four slices over and top each one with 1 tablespoons smoked blue cheese, a small scoopful of onions, 1 hamburger, another tablespoon smoked blue cheese and another scoopful of onions. Top with other slice of butter bread, buttered side out.

Add sandwiches to a skillet set over medium heat. Cook until underside is browned, flip and then cook until the other side is browned.

Cut in half and serve hot.

Um, this patty melt is pretty much perfect! YUM!! My favorite party foods are anything cheesy! As for drinks, I'm not picky...but I love unique cocktails. Something I haven't had before.
