Now that the weather has changed to warm (which really is just a tease because it’s supposed to get cold again) I have decided I need a new bedroom fan. Ever since I was a kid I have loved sleeping with fans. It’s not just the noise but it’s the feeling of air blowing in the room. It totally puts me right to sleep. My husband thinks I’m a complete freak because I will happily sleep with the fan 6 inches from my face and blasting on high.

Well, last night it was a little warm in our room and I just feel like our other fan has been trusty for 5 years but is no longer powerful enough to do the job I need it to do. So that is why I’m trying to talk my hubs into going the industrial route. Now, you might think I’m totally insane but I once slept with an industrial fan and it turned my bedroom into a wind tunnel. I was in pure heaven.

If I had to pick a downside it was that the fan shook the whole flooring and if you went downstairs it sounded like there was a jet about to take off in our bedroom. No big. I loved it and that is all that should really matter…right?

So what does all this fan talk have to do with French toast? Nothing really. I just wanted to share my fan story because I’m hoping to wear my hubby down to the point where he just caves and lets me convert our bedroom into the wind tunnel of my dreams.

But I’m not going to be totally crazy and just talk about fans. Even though I just wrote like 4 paragraphs on the subject…whoops!

French toast. This is not my first time using angel food cake as my go to bread for French toast and it will not be my last. I love the idea of nut crusted bread so I combined both and hoped for the best. The end result was crunchy on the outside and perfectly soft and spongy (in a good way) in the middle. Instead of maple syrup, I opted to use vanilla bean honey instead. Trust me, it was the right decision. Since I have made this I have smothered almost everything in vanilla honey. It’s basically the best stuff on earth.

Pistachio Crusted Angel Food Cake French Toast

This pistachio crusted angel food cake French toast is perfectly sweet and has just the right amount of nut crunchiness. Drizzle with honey and devour.

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 angel food cake, cut into 12 slices
  • 1 cup whole milk
  • 4 large eggs
  • 2 teaspoons vanilla bean paste
  • 3 tablespoons unsalted butter
  • 2 cups finely chopped shelled pistachios
  • Honey, for drizzling {I used vanilla bean honey}

Directions:

Slice angel food cake and set aside.

In a shallow bowl (I used a 9x9 dish) whisk together whole milk and eggs till the eggs are fully incorporated into the milk.

Once incorporated whisk in vanilla bean paste.

In a large skillet add a tablespoon of butter to melt over medium heat.

Quickly soak for slices of bread in the milk mixture, making sure to coat all sides.

Let the egg mixture drip off the bread and gently press both sides into the chopped pistachios.

Add the nut crusted French toast to the melted butter in the skillet and cook on all sides until the nuts are lightly toasted in color.

Continue until all pieces of cake have been fried. Add more butter in between batches if necessary.

Serve hot and with a drizzle of honey if desired.

You and my husband would get along. He loves sleeping with a noisy fan as well. I prefer no air flowing over me and absolute quiet. How's that for a combination? :) We both agree on French toast though and I think he'd love this as much as I know I would.
