Lately I have been obsessed with waffles. I’m blaming Gina. When she went away to Europe I asked her if I could borrow her waffle iron and have been making waffles nonstop. This is the first post you will see with waffles but be prepared – there are more.

These waffles are not like your typical breakfast waffle. They are savory, just a little spicy and packed full of cheese and sausage. I also topped the whole thing with a fried egg because I like to top anything with a fried egg. I’m wild and crazy like that.

I’m teaming up again this year with Jones Dairy Farm so I used their All Natural Golden Brown Mild Pork Sausage Patties for these waffles. It’s precooked so it makes making the waffles even easier!

Oh, and don’t skip that little drizzle of sriracha on the top. Sriracha is totally the maple syrup of the savory world.

Cheddar Sausage Cornmeal Waffles

These cheddar sausage cornmeal waffles are packed full of sriracha, cheddar cheese and breakfast sausage. Top with a fried egg and call it breakfast.

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 2 teaspoons baking soda
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon chipotle chile powder
  • 2 cups buttermilk
  • 4 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 2 teaspoons sriracha
  • 4 precooked Jones sausage patties, defrosted and cut into small pieces
  • 1/2 cup shredded Mexican blend cheese
  • 4 large eggs, fried

Directions:

Preheat waffle iron.

In a large mixing bowl whisk together flour, cornmeal, baking soda, smoked paprika, baking powder and chipotle chile powder.

In another bowl whisk together buttermilk, maple syrup, olive oil and sriracha.

Pour buttermilk mixture into the flour mixture and stir to combine. Stir in diced sausage and shredded cheese.

Spray your waffle iron with nonstick spray and cook waffles according to waffle iron directions.

Top warm waffles with fried eggs and a drizzle of sriracha.
