I have written three different beginning paragraphs and erased them all. The first one sounded too poetic and made me feel uneasy because I’m not sure I can pull of poetic. The second one was so bland I felt like I was talking to a wall. The third one started off with me screaming in CAPS that I love waffles. Which by the way is totally true just completely unnecessary.

If I’m being honest the writing is not really coming easy to me today. Art is is surgery at the moment so I though writing this post would help keep my mind busy. Really I’m just sort of a mess. I almost hate complaining how much I dislike when Art is in surgery. Especially when I think about the fact that it’s just kidney stones. There are so many other thing that could be wrong and I’m sitting here stressed about surgery for something as simple as kidney stones.

I don’t know. I think deep down I’m nervous because him having surgery just proves he is breakable. It proves that no matter how much I wish it wasn’t true he can get sick, he have things wrong with him and he can be in pain. I know we are humans and I know this is life but sometimes I just don’t want things to be so black and white.

Obviously I was never destined to be a doctor.

I remember the day I made these waffles. It was early September and I let Art know that even though it was September I refused to share these waffles on the blog until October. I was going to share them on October 1st but a few editorial changes later they didn’t get posted until now.

These waffles are warm in flavor and fit in perfectly with the cool weather and fall foliage. I really think the best thing about these beauties is that they are are not just full of pumpkin and chocolate chips but they are also full of brown butter.

Oh nutty delicious brown butter. How I love you so.

Since you all love me I know you are used to my crazy story telling. As I was typing Art’s surgeons came out and let me know that his surgery was a success! He is officially stone and nephrostomy tube free!

That means I can leave this post on a happy note.

Brown Butter Chocolate Chip Pumpkin Waffles

These brown butter chocolate chip pumpkin waffles are the perfect sweet way to start your day. Packed full of melty chocolate, nutty brown butter and delicious pumpkin.

Yield: 6 waffles

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Ingredients:

  • 6 tablespoons unsalted butter
  • 2-1/2 cups all purpose flour
  • 1/3 cup dark brown sugar
  • 3 teaspoons pumpkin pie spice
  • 2-1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 4 large eggs
  • 2 cups buttermilk
  • 1 teaspoon vanilla bean paste
  • 1 cup pumpkin puree
  • 1 cup dark chocolate chips
  • Whipped cream, for topping
  • Chocolate sauce, for topping
  • Maple syrup, for topping

Directions:

In a medium sized skillet set over medium heat melt the butter until it starts to foam and you see golden brown specks in the butter. You will also notice it will start to smell nutty.

Remove from heat and let cool.

Preheat waffle iron.

In a medium sized mixing bowl whisk together flour, brown sugar, pumpkin pie spice, baking powder, baking soda and kosher salt.

In a large sized mixing bowl whisk together eggs, buttermilk, vanilla bean paste, pumpkin puree and cooled brown butter.

Add dry ingredients into wet and stir until just combined. Fold in chocolate chips.

Spray your waffle iron with non-stick spray and cook waffles according to waffle iron directions.

Top cooked waffles with your choice of whipped cream, chocolate sauce or maple syrup.

Considering the circumstances, I am not surprised this is the third revision of this post. Yikes Woman! All will be well. YES I too love waffles---a LOT. So thanx for a new way to fix them.

Yay for a successful surgery! I would be a hot mess also, so I totally get it. I can't wait to make these this weekend. The chocolate is such a perfect addition!
