Art and I always pick a random show to watch late at night before bed. We usually go through a few episodes before finally turning in and going upstairs. The past year-ish or so we watched both 30 Rock and Park and Recreation in full, two times over. Sooooo finally Art drew the line and said I had to pick something new.

I of course didn’t want to give up Liz Lemon or Leslie Knope so he made the decision and picked Cheers. It’s a good show and gives us a lot of episodes to blow through before we have to yet again pick a new nighttime show.

Perfect. Right?

Well, here is the thing. I remember watching Cheers with my dad and still cry at the thought of the final episode. However, now that I’m re-watching I’m realizing so many details I missed or didn’t realize when I was a kid.

  • Why is an alcoholic ex-pitcher from the Red Sox running a bar? Doesn’t that just seem like a horrible idea?
  • Diane Chambers might just be the most annoying character on a tv show EVER!
  • The theme song to this show is the best theme song in the history of ever. (Yes, it even tops Friends)
  • How in the heck can I remember so much about this show when it started the same year I was born? (1982)
  • Carla Tortelli is both the best and the worst.

Of course I’m only writing about Cheers because I’m watching it as I try to type this post. This is what happens when you forget to write your post until the night before it’s supposed to go live.

So do you wanna know something about this salad? It’s pretty damn tasty. I had a lot of leftover ham sitting in my refrigerator and needed to use it quickly. I combined it all together and made a cobb salad with ham twist. It’s pretty similar to my favorite salad but I left out of the bacon (I know!) and used ham instead of chicken. PLUS it’s perfect for Easter ham leftovers.

I got your back like that.

I think you could easily serve it with whatever dressing is your favorite but I made up a real quick white balsamic vinaigrette to drizzle on top. But really – use whatever your love the most.

Ham Cobb Salad

This ham cobb salad is the perfect way to use up all that leftover ham. Packed full of baby greens, hard boiled eggs, avocado, tomatoes, gorgonzola cheese and ham.

Total Time: 15 minutes

Ingredients:

For salad:

  • 6 cups mixed baby greens
  • 1 cup diced ham
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup gorgonzola cheese
  • 1 avocado, peeled, pitted and diced
  • 2 hard boiled eggs, quartered

For dressing:

  • 1/4 cup white balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 cup extra virgin olive oil

Directions:

For salad:
Add mixed baby greens to a large bowl and top with ham, cherry tomatoes, gorgonzola cheese, avocado and hard boiled eggs.

Drizzle with dressing and toss to combine.

For dressing:
In a small bowl whisk together vinegar, garlic, kosher salt and black pepper.

Slowly drizzle in olive oil while whisking until fully combined.

    This is a gorgeous salad! And can I just say I love the idea of a vinaigrette instead of traditional blue cheese? I am not a huge blue cheese dressing fan so I never order a cobb. This looks fab though!
