Ham Cobb Salad

This ham cobb salad is the perfect way to use all leftover ham. It has baby greens, hard-boiled eggs, avocado, tomatoes, gorgonzola cheese, and ham.

After a ham holiday I’m always pressed for the perfect way to use up all the ham leftovers.

If you find you’re self in the same position you’re going to love this ham cobb salad. It’s packed full of diced leftover ham, mixed greens, sliced grape tomatoes, avocado, hard-boiled eggs, and gorgonzola cheese.

And, because this doesn’t sound good enough, it’s drizzled in a quick homemade garlic vinaigrette.

This salad is packed full of flavor and can be customized to suit your diet or based on what you have at home and in your pantry.

This salad is great use fro leftover ham that isn’t Easy Ham and Bean Soup. Even though that is delicious and I crave monthly.

Ingredients for cobb salad with ham

  • Mixed greens – I like to use mixed greens for this salad, but you can use arugula, watercress, iceberg lettuce, romaine lettuce, or baby spinach.
  • Diced ham – I’m using leftover holiday ham instead of the typical chicken and bacon. You could also use chopped up leftover grilled ham steak!
  • Hard-boiled egg – I used my Instant Pot hard boiled egg recipe for this salad!
  • Avocado – Don’t cut it until before you’re ready to serve, or it may turn brown.
  • Cherry tomatoes – I love the freshness of a small cherry tomato, but a chopped slicing or Roma tomato will work here.
  • Gorgonzola cheese – I like gorgonzola because it’s a mild blue cheese but if you’re in the mood for a tangy sharp blue cheese try using a Roquefort.
  • Garlic vinaigrette – I made a quick homemade dressing, but feel free to use whatever dressing you love the most.

  • White balsamic vinegar – Slightly sweet but not as sweet as traditional balsamic vinegar.
  • Grated garlic – I grate the garlic on a microplane or use squeeze garlic.
  • Kosher salt – Kosher salt is a vital dressing ingredient.
  • Black pepper – Freshly cracked black pepper is an excellent choice for a vinaigrette.
  • Olive oil – I’m using extra virgin olive oil.

Best lettuce to use

For this salad, I used a mixed greens mix from the grocery store. I like to use this because it makes the salad convenient and easy to make and combines lots of different textures of lettuce.

If you’re not a fan of mixed greens, you could use:

Protein options

Because this recipe is titled “ham cobb salad,” the main protein in this salad is ham.

However, if you’re not a fan of ham you can make this back into a tradtional cobb salad using chopped chicken and bacon.

Other options for this salad is grilled steak, Air Fryer Shrimp, or cut up turkey lunch meat.

Storage and leftovers

This leftover salad with ham and egg can be saved up to a day. The lettuce tends to get soggy if stored with the dressing.

To make ahead you can put the salad together MINUS the avocado and dressing and keep stored, covered, in the fridge, for a few hours before serving.

When you’re ready to serve, cut the avocado, add to the salad, and drizzle with vinaigrette.

For salad:

  • 6 cups mixed baby greens
  • 1 cup diced ham
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup gorgonzola cheese
  • 1 avocado peeled, pitted, and diced
  • 2 hard-boiled eggs quartered

For dressing:

  • Add mixed baby greens to a large bowl and top with ham, cherry tomatoes, gorgonzola cheese, avocado, and hard-boiled eggs.
  • Drizzle with dressing and toss to combine.

For dressing:

  • In a small bowl whisk together vinegar, garlic, kosher salt, and black pepper.
  • Slowly drizzle in olive oil while whisking until fully combined.
