Chicken Bacon Spinach Grilled Cheese

Remember last year when I teamed up with Land O’Lakes and made that totally killer roast pork and pickled cherry panini? Well we’re teaming up again, and this time it’s full force grilled cheese! I didn’t get to use my pickled cherries in this post, but I did get to use bacon in this chicken bacon spinach grilled cheese. As we all know – bacon rules. Plus, grilled cheese has always been my go-to favorite sandwich.

When I was a kid, my grandmother would always offer to make me a toasty, melted, cheesy sandwich anytime I complained that I was hungry. I really think this was so I stopped stealing all the cookies out of the cookie jar. Trust me – you could not go to my grandmother’s house without stealing a few treats. What’s the point of going to Grandma’s if you can’t leave with a sugar high?

Am I right?

This grilled cheese takes the classic 2 pieces of buttered bread and cheese up to a whole new level. It’s obviously packed with cheesy goodness (LAND O LAKES® Deli American to be exact!), but it’s also packed with freshly cooked chicken breast, super crunchy bacon, sweet baby spinach and a delicious garlic mayonnaise. This is the type of sandwich that you go out of your way to have.

In fact, I made this sandwich the other weekend and I took half upstairs to my husband. After about 5 minutes, he came into the kitchen looking for more. Luckily for him, I knew there was no way he would be satisfied with just half of a sandwich, so I had another one melting away for him on the griddle. It’s amazing how spending almost 10 years of your life with someone makes you an expert on their eating habits.

It also makes you an expert on the fact that you know they will drop parts of said sandwich on their shirt while eating it, so you have to pre-treat all their clothes before washing. Not that I should say anything; I dropped an entire chicken on the floor the other day.

Sigh.

Chicken Bacon Spinach Grilled Cheese

This chicken bacon spinach grilled cheese is packed full of flavor and perfect for dinner or lunch. Super cheesy and grilled to ooey gooey perfection.

Yield: 1 sandwich

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

For grilled cheese:

  • 2 large slices sourdough bread
  • 2 tablespoons unsalted butter
  • 2 tablespoons garlic mayonnaise (recipe below)
  • 4 slices LAND O LAKES® Deli American
  • 3 chicken tenders, grilled
  • 3 strips crispy bacon
  • 1 small handful fresh baby spinach

For garlic mayonnaise:

  • 1/2 cup mayonnaise
  • 4 cloves garlic, finely minced
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon fresh cracked pepper

Directions:

For sandwiches:
Lay out bread and spread 1 tablespoon butter on 1 side of each slice of bread, flip over.

Spread 1 tablespoon mayo on the inside of each slice of bread.

Top one slice with 2 slices LAND O LAKES® Deli American, chicken tender, bacon, spinach and remaining 2 slices cheese.

Top with remaining slice of bread, buttered side out.

Heat a griddle panini maker to medium heat and add sandwich. Close the panini maker and cook slowly on medium heat for about 10 minutes until the cheese is melted and the inside of the sandwich is hot. The outside of the bread should be golden and toasted.

Let cool for 2 minutes and cut in half.

For garlic mayonnaise:
Mix all together and keep refrigerated until ready to use.
