If there is one thing I love in the summer it’s no bake dessert. I mostly love it because it’s easy but I really love it because it means I don’t have to heat up the house for hours. When it’s 100 degrees outside the thought of heating up the house almost makes me want to scream. Plus I like to keep a nicely chilled house so ovens don’t go with that mix.

I’m such a baby when it comes to the heat I cannot stand to be warm. In a perfect world my house would be chilled to exactly 62 degrees.

Deep down inside I think I’m basically a popsicle in a human body.

Besides being obsessed with being a popsicle I’m now also obsessed with Snapchat. I feel like a 12 year old because what grown adult is obsessed with Snapchat?

Me, apparently. I basically blame Julie for my love of snapping. It’s her fault.

Ok, enough about Snapchat and me secretly wanting to live my life of a popsicle. Lets talk about these no bake cheesecake bites. They are flavored with toasted coconut and lime which reminds me of paradise and who doesn’t love paradise? Plus I used my most favorite crispy Athens phyllo cup shells. They are the perfect shell to hold the cheesecake filling and keep a perfect crunch with each and every bite.

I’m such a sucker for a crunchy shell.

Just remember this weekend is Fourth of July soooooo you should probably make this because it’s pretty amazing and totally perfect for parties. Who doesn’t love coconut, lime, cheesecake and phyllo crunch?

No Bake Coconut Lime Cheesecake Bites

These no bake coconut lime cheesecake bites are the perfect party food. Super simple to make and ready in under 30 minutes. Say hello to dessert!

Ingredients:

  • 2 boxes (30 cups in total) Athens mini fillo shells
  • 8 ounces cream cheese
  • 4 ounces vanilla bean creme fraiche
  • 1/4 cup powdered sugar
  • 1/2 cup toasted shredded sweetened coconut
  • 1 lime zested

Directions:

Preheat oven to 350 degrees.

Place phyllo shells on a baking sheet and bake for 5 minutes until lightly browned. Take out of the oven and let cool.

In the bowl of an electric mixer add cream cheese, creme fraiche and powdered sugar. Blend on medium speed until smooth and combined.

Add in toasted coconut and lime zest and mix until combined.

Fill each phyllo cup with about 1 tablespoon (or more) cheesecake mixture and top each bite with more toasted coconut if desired.

    I have yet to sign up for snapchat. I’m on the fence about it. It sounds fun, but it’s also one more sm channel to keep up with. Decisions! There’s no need to put thought into these bad boys. No doubt, I’d eat as many as I can hold in both hands.

    While I don’t like the hot temperatures, 62 would be a bit too chilly for me! Although it would give me an excuse to snuggle under a blanket! These coconut lime cheesecake bites look perfect to me!

    I am on snapchat, my boys signed me up. I just keep forgetting to do it, I am still an instagram addict, so maybe I need to mix it up. Love these little cheesecakes, that they are no bake is even better, less work, more reward.

    I can’t give in to snapchat yet probably because I feel like I’m the old lady on there. However these cheesecake bites are perfect, no one wants to bake but that’s no reason not to have cheesecake in the summer.

    Snapchat, I don’t get it. But then I’ve never quite understood instagram either so there you go. Apparently I’m 90 years old and afraid of technology. Who knows. I keep thinking of doing videos because I’m so weird and my family thinks I’m hilarious. But they have to. Because I control the food consumption in this household. So it’s a crapshoot if my humour would be welcome anywhere else. I sing and dance way too much. And do voices. And give my animals running commentary, always.

    No bake desserts are a MUST for the summer! Im all about NOT turning my oven on or at least not turning it on a ton!
