Football season is here! I probably should use an exclamation point because I’m never really that excited about football. Mostly it just means I just have to hear more random sports chatter on the TV. I prefer my TV to only be filled with Lifetime and Hallmark movies. Yeah, I’m super cheesy when it comes to my made for TV movie love. In fact, I shouldn’t even admit this BUT I totally just subscribed to the Lifetime Movie Club on our Roku. Which now means when I’m home in the kitchen cooking I’m also watching a lame dramatic movie.

It also means when my husband is all “the game is on….” I get to respond with “well, Mother, May I Sleep with Danger is on so the game is going to have to wait…”

BUT the one thing about football season that I don’t mind? FOOOOOOOOD! Anytime I go to a football party I’m guaranteed to leave stuffed. Usually so stuffed that I wish it was cool for my husband to roll me out the car because the thought of walking is too much. Of course what makes the food so good is that it’s usually meaty, cheesy and plentiful!

That is where these little sausage spinach mushroom phyllo bites come into play. I used some Athen’s mini fillo shells to be my crunchy little vessel to hold a delicious mixture of spicy sausage, mushrooms, spinach and CHEESE! It’s like I took a stuffed mushroom and turned it into a crunchy little appetizer. Which really is what I did. So it’s not “like I did it” I truly did do it!

Of course, I made these on a random weekday so they weren’t exactly served at a football party but they made an awesome cheesy girl movie fest feast. BUT don’t worry if you don’t share my love of cheesy movies they taste great while watching football too. My husband assured me of that!

Sausage Spinach Mushroom Phyllo Bites

These sausage spinach mushroom phyllo bites are the perfect football snack! Just throw the ingredients into a skillet, give it a little cook, fill up the fillo shells and BOOM it's snack time! You'll LOVE these flavorful little bites.

Yield: 30 bites

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 2 spicy Italian sausages, casings removed
  • 2 cups chopped fresh mushrooms
  • 1-1/2 cup frozen chopped spinach
  • 1 (8 ounce) brick cream cheese
  • 2 (30 count total) packages Athen’s mini fillo shells
  • Shredded white cheddar cheese

Directions:

Add meat to a medium skillet over medium high heat and sauté until it starts to brown. Making sure to break up the meat while it cooks.

Add in the mushrooms and cook for a few more minutes until they start to soften. Add in spinach and cream cheese and mix to combine. Lower the heat if needed and work the cream cheese into the meat mixture until smooth.

Scoop an equal amount of filling into the mini fillo shells and place onto a baking sheet. Top each appetizer with a little sprinkling of cheese.

Add to the oven and broil for a few minutes or just until the cheese is melted and brown.

Serve warm.
