But sometimes, you want more than just basic banana bread. 

Sometimes I like to switch it up and make a delicious Sourdough Discard Banana Bread.

But other times, I still want that warm banana flavor, but with a crispy topping, and this banana bread crisp recipe hits the spot!

This banana bread crisp gives you everything you love about banana bread–the warm, moist, banana flavor–and combines it with a perfectly crumbly, crispy top. 

And the best part is, it’s super easy to whip up!

Feel free to get creative with the addition of fun flavors like chocolate or peanut butter chips, dried fruits like raisins, and other nuts like cashews or even macadamia! 

I like to serve this banana bread crisp with a big dollop of whipped cream.

Other great options for a topping are a drizzle of honey, a sprinkle of powdered sugar, or a scoop of ice cream! 

Storage and leftovers for banana bread crisp 

This dessert can last covered, in an airtight container, for up to 3 days. 

Store whipped cream separately.

Ingredients

For batter:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 4 tablespoons unsalted melted butter
  • 3/4 teaspoons baking powder
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoons kosher salt
  • 2 ripe bananas sliced 1/2 inch thick

For crisp topping:

  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 4 tablespoons unsalted butter room temperature
  • 1/2 teaspoon baking powder
  • Pinch kosher salt
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans

For serving:

  • Powdered sugar optional
  • Whipped topping optional

Instructions

For batter:

  • Preheat the oven to 375 degrees F and spray a 9×9 pan with non-stick spray, set aside.
  • In a bowl add flour, brown sugar, milk, melted butter, baking powder, cinnamon, and kosher and mix together until combined.
  • Add batter to the prepared pan and top the batter with sliced bananas.
  • Top with crisp topping and bake for about 35 minutes or until the bread is fully cooked and the topping is lightly browned and crisp.
  • If desired, serve with powdered sugar or whipped topping.

For crisp topping:

  • In a medium-sized bowl add brown sugar, flour, unsalted butter, baking powder, and kosher salt. Mix until crumbly and stir in rolled oats and pecans.
