Sweet Soy Marinated Grilled Chicken Thighs

Do you guys remember the good old days of Pinterest? When I first joined Pinterest it was invite only (I had to wait WEEKS to get an invite!) and you weren’t supposed to self-promote. I laugh because now Pinterest is now just self-promoting and little to nothing more. I mean, I’m guilty of it as well. I have a blog and Pinterest is a big traffic driver BUT I miss the good old days. I miss the days of pinning random recipes and non-stop photos of cute animals.

Now Pinterest is a job and it’s 100% less enjoyable.

However, the other day when I was thinking about old school Pinterest I thought about this recipe I remember pinning when I first joined. It was a grilled chicken that was tossed in butter and green onions. After about an hour of searching, I found my original pin and jumped for joy the website was still up and running.

They called their recipe “Hawaiian bbq” and there are a lot of recipes super similar on Pinterest now BUT I wanted to reread this exact recipe. I looked at what she did and I opted to change it up a bit. And of course, I changed my recipe name to sweet soy marinated grilled chicken thighs because I felt it summed up the recipe a bit better. Using the term Hawaiian is just too vague.

Their recipe marinade was simple – brown sugar, soy sauce, garlic and ginger. Now, I like soy BUT most of the time I find it overwhelming in recipes. I can’t handle the super strong taste so I opted to cut the soy in half and add in some unsweetened coconut milk – 100% baller move! And because I love big time flavor I stepped up the addition of flavors by throwing in extra ginger, more garlic, lemongrass and chili garlic sauce. This marinade is flavorful, simple and perfect on chicken, pork or even beef.

Then just throw it on the grill, eat and be happy.

Oh, and don’t skip the last and final step – tossing the sweet soy marinated grilled chicken thighs in butter and green onions. It’s worth it. Trust me!

Sweet Soy Marinated Grilled Chicken Thighs

Cook Time: 20 minutes

Total Time: 30 minutesplus marinating time

Ingredients:

  • 1/2 cup dark brown sugar
  • 1/4 cup low sodium soy sauce
  • 1/4 cup unsweetened coconut milk
  • 1 tablespoon grated ginger
  • 2 teaspoons grated garlic
  • 2 teaspoons lemongrass paste
  • 2 teaspoons chili garlic sauce
  • 1/2 small sweet onion, sliced
  • 10 boneless skinless chicken thighs, about 2-1/2 pounds
  • 4 tablespoons unsalted butter, melted
  • 4 green onions, trimmed and thinly sliced

Directions:

In a large bowl add brown sugar, low sodium soy sauce, coconut milk, grated ginger, grated garlic, lemongrass paste and chili garlic sauce. Whisk to combine until the sugar has dissolved.

Add the sliced onion and chicken thighs. Toss to coat, cover and let the chicken marinate for at least 4 hours.

Heat your grill to medium-high heat, add you chicken to the grill and grill until fully cooked - about 15 minutes.

In a 9x13 dish add melted butter and green onions. Once your chicken has fully cooked remove it from the grill, add it to the dish and toss in the melted butter and green onions.

If desired, serve with grilled pineapple.
