Now onto these delicious cookies! I first saw these beauties on the delicious blog Bakers Royale. I knew I had to make them. How can you pass up anything that has salted caramel in the title?  I know I can’t!

There is something about that combination that just screams “please make me!”  So guess what? I went into the kitchen and got my bake on. Creaming butter, chopping nuts and stirring warm melted caramel. It was all part of a great day 🙂  The cookies are a shortbread texture, rolled in toasted almonds, filled with creamy caramel and sprinkled with Fleur De Sel sea salt.  Do not try and use table salt. The flavor will not be the same.

Salted Caramel Thumbprints

These salted caramel thumbprint cookies are deliciously nutty and filled with creamy salted caramel. You will love how easy and delicious these cookie taste.

Prep Time: 35 minutes

Cook Time: 25 minutes

Total Time: 60 minutes

Ingredients:

For Cookies:

  • 1 cup plus 2 tablespoons of flour
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/4 cup white
  • 1/4 cup light brown sugar
  • 1 egg separated
  • 1 teaspoon of vanilla
  • 1/2 cup almonds, chopped

For Caramel Sauce:

  • 20 Kraft caramel squares, unwrapped
  • 1/4 cup heavy whipping cream

For Assembly:

  • Sea salt

Directions:

For Cookies:
Beat butter and sugar until light and fluffy. Add light brown sugar, egg yolk and vanilla extract. Beat until just combined. Set batter aside.

In a separate bowl whisk flour and salt. Slowly add flour mixture to batter while beating on low until the dough resembles lumpy wet sand. Do not over beat or the dough will become sticky. Form into one inch balls and refrigerate for 30 minutes.

In the mean time, beat egg white until frothy. Removed chilled dough and dip into egg whites first then roll into nuts. Using either your thumb or a round ended tool to create an indentation.

Bake at 350 degrees for 15 minutes. Remove from baking sheet and cool on rack.

For Caramel Sauce:
Place caramel squares and cream in a sauce pan and melt over low heat for approximately 7-8 minutes. Caramel sauce is ready when it's smooth and melted.

For Assembly:
Fill indentation of thumbprint cookie and sprinkle with sea salt.

how much liquid does the melted caramels and heavy cream end up being? I find it easier to make caramel than unwrapping the pre-made kind, and was wondering how much i should use.
