Last night I spent my night virtually watching the Oscars with Gina via Facebook. Back and forth we shared witty comments about dresses, baby bumps, speeches and super hot men with eyes as blue as the ocean. Obviously it was a highly productive night.

Lets talk about the Oscar dresses for a second. I saw a women with a bow the size of Canada attached to the ass of her dress. Why people, why? If you’re lucky enough to attend the Oscars I would hope that you could buy a dress that wouldn’t make you look like your child just stuck their church craft on the backside of your dress. Then again, maybe I’m wrong. Maybe bows are in? Maybe I’m just too boring with my own wardrobe? I’m the classic yoga/legging pants with cotton t-shirt kind of girl. If I’m feeling fancy I will throw on a scarf and call it an outfit. Being comfortable rules.

Luckily for you I didn’t spend the whole night watching TV. In between snarky Oscar comments I found a little time to write up this post.

I made these brownies a few weeks ago and have been dreaming about them ever since. They are stuffed with tons of melted chocolate, Guinness beer and the most amazing chocolate covered sea salted caramel filled morsels. Those morsels are so crazy delicious I don’t even know where to begin. Sweet and salty caramel stuffed inside a mini chocolate shell…what’s not to love?

These brownies are super fudgy and have a very intense chocolate flavor. That is why I made a quick Jameson whipped cream to slather on top. Guinness, chocolate and Jameson. These brownies seriously have it all! I also drizzled these brownies with a homemade Jameson caramel. I shouldn’t admit this but I ate that caramel with a spoon. I’m such a hot mess.

I should tell you that I’m going to be slightly mean and not give you the Irish whiskey caramel sauce recipe until Friday. I figured three different recipes in one post might be a bit too much to handle. Plus, that caramel deserves a post all to itself. Caramel and Irish whiskey…ummmmm yes please!

Salted Caramel Guinness Brownies with Jameson Whipped Cream

These rich fudgy salted caramel Guinness brownies are topped with Jameson whipped cream and a sweet Jameson caramel.

Yield: 9x13 pan

Prep Time: 25 minutes

Cook Time: 30 minutes

Total Time: 55 minutes

Ingredients:

For brownies:

  • 1 cup all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 6 tablespoons unsalted butter
  • 8 ounces 70% dark chocolate, chopped
  • 3/4 cup white chocolate morsels
  • 4 large eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup Guinness
  • 1 cup chocolate covered sea salted caramel filled morsels

For whipped cream:

  • 1 cup heavy whipped cream
  • 1 tablespoon Jameson Irish whiskey
  • 1 teaspoon vanilla bean paste

Irish Whiskey Caramel Sauce for topping

Directions:

For brownies:
Preheat oven to 375 degrees and spray a 9x13 pan with non-stick spray.

In a bowl whisk together flour, cocoa powder and kosher salt, set aside.

In a double boiler melt together butter, dark chocolate and white chocolate. Once fully melted and smooth remove from the heat to cool slightly.

In a bowl of an electric mixer add eggs and brown sugar. Mix together on medium speed until the mixture is fluffy, about 3 minutes.

With the mixer still running slowly drizzle in chocolate mixture. Once fully combined stir in vanilla and Guinness.

Pour brownie mixture into prepared pan and sprinkle the top with chocolate covered sea salted caramel filled morsels.

Bake 25-30 minutes until a toothpick comes out clean when inserted in the middle.

Let brownies cool, cut into squares top with Jameson whipped cream and Jameson caramel (recipe on Friday!)

For whipped cream:

In a bowl of an electric mixer add all ingredients and whisk on high speed until fluffy.

These sound great! Don't think we can get the sea salt morsels in the UK, but might try with some other chocolate coated caramels and see how they turn out!

Trader Joes also has sea salt caramels covered in choc. Maybe I need to make a trip.
