This whole winter I complained how it lasted forever. It was cold, snowy and overall just a huge drain on my personal happiness. At one point I told my husband that if it snowed one more time we were moving somewhere warm. I didn’t care where we moved just as long as there was a Trader Joe’s nearby. Totally rational, right?

Well, now the weather is starting to warm up so now I feel like I’m about to die. It’s not really hot enough to turn on the air conditioning but my house has zero air flow so it has a hard time staying cool. I’m not sure why air flow is not considered when building a house but engineers (architects?) really need to get on that. My house is like a jail cell with zero breeze. Plus at night I’m forced (ok, forced is a strong word) to sleep at the foot of the bed with the fan blowing on my face. Basically I look like I belong in a bad 1980’s music video with all my hair flying around. If you think I don’t know I sound crazy I totally know. I just cannot handle being even a little bit hot #firstworldproblems

So, what does a girl do when she is roasting in her house? She make something no bake.

No oven = no added heat.

This cheesecake is super creamy (the way I like it!) and has just a touch of lime flavor. The delicious passion fruit on top is so over the top amazing I don’t even know where to begin. If you have never had fresh passion fruit it’s can only be described as sweet and tart. It’s cuts the super cream cheese flavor of the cheesecake without overpowering the whole dish.

No Bake Passion Fruit Cheesecake

This no bake passion fruit cheesecake is the perfect balance of sweet, citrus and tart. If you have never had fresh passion fruit before you are in for a treat.

Yield: 6 servings

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 30 minutes plus chilling time

Ingredients:

For crust:
1-1/2 cup graham cracker crumbs
1/3 cup sugar
1/3 cup butter, melted

For cheesecake:
16 ounces cream cheese
1 lime zested
1/2 lime juiced
1 cup heavy whipping cream
1/3 cup sugar
6 fresh passion fruits

Directions:

For crust:
In a small mixing bowl add graham cracker crumbs, sugar and melted butter. Mix together until the mixture is moistened.

Press into a 9-inch pie plate or press into single serving mason jars.

Add the pie to fridge so the crust hardens.

For cheesecake:
In the bowl of an electric mixer add cream cheese, lime zest and lime juice. Mix together on medium high speed until smooth.

Pour in heavy cream and start incorporating into the cream cheese mixture. It's best to start slow and work your way up in speed. If you try to go too fast at once it will make a mess.

Once the heavy cream is combined turn the speed up to high and beat for about 3 minutes until the mixture is thick and creamy.

Pour in sugar and continue to beat for another minutes until combined.

Carefully spread the mixture on top of the crust (or into jars) and let sit in the fridge for at least 2 hours but can be left overnight as well.

When you are ready to serve the cheesecake cut open the passion fruit and pour across the top of the cheesecake.

A bad 80's video huh. I can identify. I do not sleep well if I am too hot. If I had to lay or is it lie----at the foot of my bed to catch some cool, I would. However making this cheesecake would be a wonderful alternative. I have a passion for passion fruit. Not a very original word joke, but I am tired and it's the best I can do.

We have negligible air flow either, but mostly because we can't open the windows. There are no screens and pigeons sit outside them all day every day....so I can just see one flying into my apartment!

No bake sounds like a good compromise, though. Especially where cheesecake is concerned! Love the tropical passionfruit topping!

I hear ya. I actually DID put one of the ac in upstairs because I just could not deal. Then the next day it dropped to 50. Figures. I swear I complain if it's sunny, rainy, or snowy...

However these cheesecakes would make super happy!

Oh I just tried my first passion fruit a few weeks ago thanks to Frieda as well. Now I need to pick up some more to try this cheesecake.
