The older I get the less sweet I like my tea. I would never say this in the south but I feel I’m safe saying this in New York. However, when it comes to cocktails or popsicles I’m still all about the sweetness. I think because when I’m drinking it normal style I find the sugar a little off putting. Usually when people make sweet tea they make SWEEEEEEEEEEEEET tea. It’s almost thick with sugar and I feel like my teeth are rotting with each and every sip.

Yeah, I just can’t do it. Which is why most of the time I go unsweetened or sweetened with just a touch of Truvia sweetener. The Truvia gives it that touch of sweetness without that whole teeth rotting feeling.

However, these little frozen bits of joy are served up perfectly sweet with a hint of lemon and mint. I’m such a sucker for those flavors in my tea. Plus it’s summer and mint basically grows like a weed so it’s time to use it up! Actually now that I said that I’m pretty sure mint is a weed.

Eh. It doesn’t matter. Just use it up because it’s no fun watching stuff go to waste.

If you don’t have a fancy popsicle mold don’t go out and buy one {unless you want too and if you do I really happen to think this one is pretty cute} because you probably have what you need in the house. For these pops I just used small 3 ounce dixie cups and some short wooden popsicle sticks I found on Amazon. After the popsicles freeze up you can just peel off the paper and BOOM – dessert.

Sweet Tea Popsicles

These sweet tea popsicles are the perfect way to enjoy summer. I froze up Southern sweet tea flavored with lemon and mint to create the perfect hot summer day treat.

Yield: 4 cups tea

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutesplus freezing time

Ingredients:

  • 4 cups water
  • 4 black tea bags
  • 12 mint leaves, lightly bruised
  • 1/2 lemon, juiced
  • 1-3 tablespoons Truvia spoonable sweetener

Directions:

Add water to a medium sized pot and set over high heat. Once the water starts boiling add in the tea bags, and remove from the heat.

Let the tea steep for 5 minutes and then gently squeeze out the tea bags.

Add in mint leaves, lemon juice and Truiva. Start off by adding 1 tablespoon and add more until you reach your desired sweetness level.

Let the mixture cool until room temperature (or add to the refrigerator) before making popsicles. {Remove the mint leaves if desired}

When you're ready to make your pops set out your cups, fill almost to the top, cover the cup with foil and press the popsicle stick into the middle of the foil. This will help keep the stick in place while it freezes.

Add to the freezer and freeze for at least 4 hours until solid.

Note: This make 4 cups of iced tea that can be used for making popsicles. I made 10 ice pops with enough tea leftovers to enjoy a few glasses.

I went to college in the south and I never drank the tea once. Too sweet for me but I think I can handle these pops. Sugar in tea flavored treats is a-okay by me!

I love, love, love them! I'm all about sweet tea and these pops are fantastic! I have a mold but I love the little cups with the wooden spoons!!!
