This vanilla bean dutch baby is PACKED full of vanilla beans and topped with lots of fresh summer berries. It’s so easy to make and sure to impress your whole family.

Of course, I couldn’t just serve mine with plain so I also topped this baby with a sweet vanilla bean mascarpone whipped cream.
Yeah, this baby is flavor packed!
Again, don’t worry if you’ve never made a Dutch baby before I swear they are easy!
The hardest part is waiting for it to cook. Which we all know is the hardest part of any recipe.

Another great thing about Dutch babies is that it makes a large family breakfast a billion times easier.
It’s great to sit in front of a griddle making pancake after pancake BUT with this baby, all you have to do is throw the batter in the pan, throw the pan in the oven, and boom. A giant pancake for a family of 4 is served.
OR if you’re my husband and I a giant pancake for 2 is served.
I can’t help it.
I probably eat far more than my share of these little-puffed pancakes.
Now, I used my favorite vanilla bean paste in this vanilla bean Dutch baby because it makes getting vanilla beans into anything super easy.
BUT if you can’t find it or have any on hand you can substitute the vanilla bean paste with vanilla extract or the inside scrapings of a fresh vanilla bean.
PLUS make sure you use an awesome non-stick pan because it’s a major sad panda when your Dutch baby won’t come out of its pan.

Vanilla Bean Dutch Baby
Ingredients
For Dutch baby:
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup white whole wheat flour
- 1 tablespoon vanilla bean paste
- 2 teaspoons brown sugar
- 1/8 teaspoon kosher salt
- 2 tablespoons unsalted butter melted
For topping:
- ¼ cup mascarpone cheese
- ¼ cup heavy whipping cream
- 2 teaspoons vanilla bean paste
- Fresh cut strawberries
- Fresh blueberries
- Powdered sugar optional
Instructions
For Dutch baby:
- In a blender add eggs, whole milk, flour, vanilla bean paste, brown sugar, and kosher salt.
- Blend until completely mixed. Let rest for 20 minutes.
- Shortly before the 20 minutes are up preheat your oven to 425 degrees F and add the warm melted butter to your 12-inch skillet.
- Pour in the batter and place into the oven.
- Bake for 15-18 minutes or until the Dutch baby is puffed up and lightly golden brown.
- Remove from the oven and let cool slightly. When the Dutch baby slightly deflates, top with mascarpone mixture, fresh berries, and powdered sugar.
For topping:
- In the bowl of an electric mixer add mascarpone cheese, heavy whipping cream, and vanilla bean paste. Whip until combined and fluffy.

I love Dutch baby pancakes! I admit there have been times I had almost an entire Dutch baby on my own. This recipe sounds like the perfect way to start the weekend!
