You guys I’m obsessed with watching all the Food Network shows. It’s out. of. control. Art walks in the door and looks at me saying “Ina…again?” Yes Ina again! That’s why when I was asked to take part in the Chopped at Home Challenge with Sargento® I wrote back HECK YES! Ok, I didn’t really write back HECK YES in CAPS because that is now how adults sent emails. However, I wish that was socially acceptable because I would totally reply that excited to most of the work emails I get. PLUS this campaign combines Food Network and cheese. Do things get any better?

Ok, so here was my chopped challenge – pork tenderloin, broccoli, cherry tomatoes and Sargento Chefs Blend 4 State cheddar cheese. While I was more than happy they didn’t throw some weird curveball ingredient I was still worried I wouldn’t come up with something delicious enough. I was wrong. I rocked the heck out of this challenge. Trust me, this one pot cheddar cajun pork pasta is going to rock your pasta loving world! Plus I already have a major love for Sargento cheese since they carry all the blends I crave! In fact they have over 30 varieties of cheese and their shredded cheese is always cut from blocks of 100% real, natural cheese. Hello delicious cheese!

The pork is flavored with Cajun seasoning and then tossed with creamy pasta, broccoli and my homemade slow roasted cherry tomatoes. That’s right – I made those tomatoes on Monday and I’m showing you how to use them today!

One Pot Cheddar Cajun Pork Pasta

The one pot cheddar cajun pork pasta is packed full of broccoli, slow roasted cherry tomatoes, sharp cheddar cheese and LOTS of cajun spiced pork. You'll love how simple this dish is to make and the cleanup is a breeze since it's all made in the same pot!

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 pound pork tenderloin, cut into cubes
  • Cajun seasoning, to taste
  • Kosher salt, to taste
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 2 cups chicken stock, more may be needed
  • 1/2 cup half and half
  • 8 ounces mini penne pasta
  • 1 cup Sargento 4 State Cheddar Blend
  • 2 cups lightly steamed broccoli florets
  • 1 cup slow roasted cherry tomatoes

Directions:

In a bowl add your cubed pork tenderloin with desired amount of Cajun seasoning and kosher salt. Toss to coat. The amount you use will depend on the seasoning blend you use.

Set a 12-inch skillet over medium high heat and add olive oil. Once the oil is hot add in the seasoned pork and cook till browned on the outside - about 5 minutes. Remove from the skillet and set aside. (Option 2: Grill the whole pork tenderloin and slice to add to the pasta after it's done cooking.)

Add in the onion and garlic and cook just until the onion has softened.

Add in chicken stock, half and half and pasta. Bring to a low boil, reduce heat to medium, cover and simmer until the past is tender. If it looks like all your liquid will be boiled out add a bit more chicken stock to the mix just to keep the pasta moist. You need a bit of moisture to keep the pasta creamy.

After the pasta is fully cooked stir in about 3/4 cups of the cheese and mix to combine. Stir in steamed broccoli florets, slow roasted cherry tomatoes and the browned pork tenderloin. Stir to combine and sprinkle with remaining shredded cheese. Season the top with cracked pepper if desired.

Note: You can easily double this recipe but remember to use a bigger pan.

I came from work tired and googled. Pork cheddar pasta and tomato. This is what. I subbed spinach for the broccoli and it turned out delish! I did add a dash of sour cream to add some creamy smoothness. It worked out great. Coming from a tired dad tired from work and needing to cook dinner. Thank you

Oh my, this just sounds so creamy and amazing! I adore anything cajun, but when it also involves pasta I think you've completely won my inner fat-kid's heart!
