Seriously, my poor husband eats so much asparagus I’m pretty sure at this point he is shocked when I haven’t made it 3 times in a week. Sorry hubs, it’s my favorite! Plus it tastes even better when it’s grilled or roasted. Of course, this recipe is straight up roasting because apparently, winter has decided to show up and I don’t feel like lugging out the grill JUST for vegetables. Even though I am a total grilling kind of lady. When I first moved to New York as a nanny I worked for an awesome family (who I now lovingly refer to as my “NY family”) who had a grill just outside their kitchen door. You could find me grilling all. winter. long. even when it was snowing. There is no shame in my easy cleanup game.
Ok, but really now I’m just rambling because I haven’t even shared with you what totally inspired this delicious little side dish. Back in October when I was on the Ruby Princess we dined on board at The Salty Dog Gastropub. It’s almost like tapas meets bar food. Which to me is like saying heaven meets heaven in the form of food.

While I was there I had this awesome little dish of charred asparagus with grilled halloumi cheese and a lemon vinaigrette. I knew when I got home I wanted to recreate this dish in a holiday kind of way. It’s not really practical (or financially sensible) to be grilling up single servings of halloumi cheese so I swapped it out for a little aged nutty Parmesan. PLUS I just really love Parm and will come up with any excuse to use it up.
I also love the little hint of lemon since I’m a huge fan of the brightness it brings to dishes. The crushed red pepper flakes are optional BUT who would want to do that? Ohhhhhh and it’s ready in just 20 minutes!
Plus this dish is totally holiday appropriate. Yummy roasted asparagus covered in Parmesan cheese. It’s basically a match made in holiday side dish heaven.

Parmesan Roasted Asparagus
This Parmesan roasted asparagus is sprinkled with Parmesan cheese, crushed red pepper and a little squeeze of lemon. You'll love how simple and delicious this side dish is to make. Best part is the dish is made in just 20 minutes!
Yield: 1 pound asparagus
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients:
- 1 pound asparagus, ends trimmed
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh lemon juice
- Kosher salt, to taste
- Fresh cracked pepper, to taste
- 1/3 cup shredded Parmesan cheese
- Crushed red pepper flakes, optional
Directions:
Preheat oven to 425 degrees.
On a large rimmed baking sheet add asparagus and drizzle with olive oil and lemon juice. Season the asparagus with desired amount of kosher salt and black pepper. Using your hands toss the asparagus so that it's evenly seasoned.
Bake for 10 minutes, remove from the oven, sprinkle with Parmesan cheese and put back in the oven for another 5 minutes to continue cooking until the cheese is melted.
Once the cheese is melted remove from the oven and sprinkle with red pepper flakes if desired.
Note: If your asparagus is super thick you will have to increase initial baking time. Also, don't add too much salt at first because the Parmesan cheese will have some saltiness to the dish.

We love asparagus too and have it probably 2 times a week, maybe more. I'm all about roasting it so YES to adding cheese!!
