Let’s talk about the month of February. It’s the worst. I mean this because at this point I’m 100% over winter. The short days and lack of sunshine really do a number on my sanity. I’m weirdly ok with the cold air but I need my sunshine. However, I guess there a few things that are ok about February – my birthday, Valentine’s Day and the fact that I’m going to San Fransico next week. So guess it’s not all bad.

But I still want my damn sunshine and long days.

I guess this smoked mozzarella bbq chicken french bread pizza is also something good about February. This baby is PACKED full of flavor and would be a HUGE hit at you upcoming football party or even for Valentine’s Day! In fact, last year when I asked my hubs what he wanted for v-day he actually requested pizza. He is low maintenance and he knows what he likes – delicious pizza packed with toppings! I mean, who doesn’t love pizza?

Of course, instead of using traditional pizza dough I opted to instead use French bread. I have actually always had a weird obsession with French bread pizza because I used to think the frozen ones from Stouffers were the best ever. As an adult, I realize I was about Stouffers being the best BUT I still have a weakness for those carb packed little pizza bombs.

Instead of doing traditional marinara sauce I instead turned the bread into garlic bread, smothered it in BBQ sauce, topped it with caramelized red onions, shredded chicken, smoked mozzarella and a sprinkling of cilantro. You guys – ahhhhhhmazing!

Seriously, this pizza needs to be made ASAP! It’s that good!

Smoked Mozzarella BBQ Chicken French Bread Pizza

This smoked mozzarella bbq chicken french bread pizza is packed full of flavor and a breeze to make. I made it even easier by using rotisserie chicken so it's ready in just 30 minutes! You're going to love this flavorful dish that's perfect for football parties, weeknight dinner or a delicious snack.

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  •  1 (18 inch) loaf French bread, cut in half and down the middle
  • 2 tablespoons olive oil, divided
  • 2 tablespoons grated garlic
  • 1 red onion, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 (4-5 pound) rotisserie chicken, meat pick off
  • 1-1/2 cups bbq sauce, divided
  • 3 cups shredded smoked mozzarella
  • 1/4 cup minced cilantro

Directions:

Preheat oven to 450 degrees and line a baking sheet with parchment paper or a silpat liner.

Lay out your 4 pieces of bread, cut side up. Baste the bread with about 1 tablespoon olive oil and spread on grated garlic. Bake for about 5 minutes just to bring a little color to the bread. Remove from the oven and set aside.

In a large skillet add 1 tablespoon olive oil and set over medium-high heat. Add in onions and cook for about 10 minutes until they are soft. Add in balsamic vinegar and cook for another minute just to make sure it's incorporated.

Remove the pan from the stove and add in rotisserie chicken meat and 1 cup bbq sauce. Stir to combine.

To assemble French bread pizza lightly coat top of bread with extra bbq sauce and add equal amount of a of meat mixture to the French bread. Top with equal amounts cheese and bake for 5-10 minutes or just until the cheese is melted and pizza is hot.

Remove pizza from oven, sprinkle with cilantro and drizzle with extra bbq sauce if desired.
