PIZZA AND WINE! Can you tell I’m excited about this post? Not only is this pizza crazy delicious but it’s made in one of my favorite cooking vessels of all time – my cast iron skillet! I got my cast iron skillet from my dad who got it from his mom. This baby is well over 60 years old and is still a major workhorse in the in the kitchen. Seriously, when taken care of properly this baby will last FOREVER! Plus, if you have never had skillet pizza you need to get on it ASAP. It comes out with the most perfectly crispy bottom and crust. Which, truth be told, is my favorite part.

Oh, and this isn’t just any old regular pizza – nope! It’s light on the red sauce, heavy on the cheese (3 different kinds!) and topped with sweet Italian sausage and steamed broccoli rabe. SOOOO GOOD! Plus it pairs perfectly with red wine BUT not just any red wine – wine that was sent to my door via Weekly Tasting! Actually, all 4 bottles were paired with a different take-out food but I honed right into that bottle that goes well with pizza.

I know there are a lot of ways to get wine but my favorite way is by mail. Mostly because there are times I really want a bottle of wine and I forget that the wine store closes at 7 pm OR there are so many choices at the store I have a small mental freak out and just grab whatever has a cute label. Yeah, picking via label is a horrible way to pick a wine.

BUT now I have Weekly Tasting in my life and all is well! Oh, and my favorite part is the fun tasting cards! It gives you a bit of information about the wine and on the back side, it gives you a fun recipe (that goes along with the theme) that will pair perfectly with the wine. I wasn’t sure what bottle to open first but then I saw that one of the bottles paired with pizza and I was SOLD!

And I know I already told you about this sausage broccoli rabe skillet pizza but for the love of everything, it’s so good. I have always liked broccoli rabe but normally when I eat it it’s as a side dish or on my most favorite pressed sandwich EVER. Soooooooo putting it on a pizza was a bit of change but a change I loved! Also, big props to the husband for playing the part of hand model for that above picture. I rewarded him with pizza and wine after the shoot was over.

Sausage Broccoli Rabe Skillet Pizza

This sausage broccoli rabe skillet pizza is perfectly seasoned and made with 3 different delicious kinds of cheese. It's made right in a 12-inch cast iron skillet and comes out perfectly crisp. Plus, this pizza pairs perfectly with wine from Weekly Tasting!

Yield: 4 servings

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

  • 1/4 cup olive oil
  • 1 pound pizza dough, room temperature
  • 1 teaspoon garlic powder
  • 1/2 pound sweet Italian sausage
  • 5 pieces broccoli rabe
  • 1/4 cup marinara sauce
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup shredded Romano cheese
  • 1 cup shredded Mozzarella cheese
  • 1/2 teaspoon crushed red pepper
  • Grated Parmesan cheese, for topping (optional)

Directions:

Add olive oil to a 12-inch cast iron skillet and place dough into the skillet. Using your fingertips spread the dough as close to the edge as possible. It will shrink slightly back but you should have no more than 1-inch space between the dough and the pan.

Sprinkle the dough with garlic powder and set aside.

Preheat your oven to 425 degrees.

In a skillet set over medium heat add your sausage. Break up the sausage while it browns. When the sausage is browned add the broccoli rabe to the skillet, cover the skillet and let it steam for a few minutes to help soften it up.

Start preparing your pizza by spreading out the marinara sauce, leaving about 1 inch from the edge of the dough sauce free.

Sprinkle with 2 tablespoons Parmesan cheese, Romano cheese and 1/2 cup shredded mozzarella cheese. Top with crumbled sausage and steamed broccoli rabe. Top with remaining cheese and crushed red pepper.

Add to the oven and bake for 15-20 minutes or until the crust is fully cooked and the top of the pizza is golden brown. You know the dough is cooked because the bottom of the pizza will be golden in color. You can check this by gently lifting up the pizza and checking the color.

Let rest in the pan for about 5 minutes, if desired sprinkle with grated Parmesan cheese, remove pizza from skillet, slice and enjoy.

I totally pick wine based on their labels too. ha!

But I have been enjoying a medium bodied Chardonnay lately.

And pizza and wine are the best together, esp with that broccoli rabe on there. so good.
