It’s that beautiful time of the year – cocktail time! It’s also the time of the year where you wake up, put on capri pants and go to walk out the house and it’s snowing. SNOWING!  You guys, NO! NO! I completely refuse to believe that winter is actually here. I literally opened the door and whispered to myself “winter is coming.” Then I shut the door and put on real shoes because I simply cannot wear flip flops in the snow. Which is a real bummer because I totally would except it would result in frozen little toes and that sounds 100% not fun. 

You know what else winter brings? The craving for 100% comfort food. You know what is 100% comfort to me? Mac and cheese! The real issues I have with mac and cheese is that I make a tray and pretty much want to eat the whole thing by myself. I literally scoop it into a bowl and eat till I’m about to burst. Oh, and I’m so stuffed after my mac and cheese I eat zero vegetables. Yeah, no bueno.

It was actually cheesy and full of sharp cheddar flavor and the broccoli cooked up bright and still with a bit of crunch to it. So good!

Now, to serve along with this cheesy and delicious mac and cheese I went full on fall and full on Vermont. I paired apple cider with pumpkin beer and went for it. If you’re a fan of shandy you usually think of a light beer mixed with lemonade but in this case, I went pumpkin beer mixed with fresh sweet pressed cider. You could also pair it with sparkling cider if you’re looking for full-on bubbles.

Ingredients:

  • 1 part apple cider
  • 1 part pumpkin beer
  • Pomegranate seeds, for garnish
  • Apple slices, for garnish
  • Rosemary, for garnish

Directions:

In a short cocktail glass add ice and fill with equal parts apple cider and pumpkin beer. Garnish with pomegranate seeds, apple slices and rosemary if desired.
