Do you remember last year when I made my Apple Pie Baked French Toast? Well, I’m giving you another easy and delicious way to use up apple fruit filling.

This apple pie filling coffee cake is a great way to end the day or an extra sweet way to start the day! I took a white cake mix, jazzed it up with spices, and topped it with a whole can of Lucky Leaf apple fruit filling.

Then, I glazed it with a simple powdered sugar glaze to finish it off.

This cake is the perfect fall, winter, and holiday cake. Plus, you’ll love how easy it is to whip up and you’re guests won’t even know it’s semi-homemade.

Ingredients for apple pie filling coffee cake

  • White cake mix – I’m using a basic white cake mix for this recipe. You could also use a boxed spice, vanilla, or yellow cake mix in its place.
  • Eggs – This helps bring moisture to the cake.
  • Sour cream – Brings a tang and lusciousness to the cake.
  • Whole milk – This blend of spices can be found in the spice aisle of the grocery store. 
  • Apple pie spice – This blend of spices can be found in the spice aisle of the grocery store. Typically it includes cinnamon, nutmeg, allspice, ginger, and cardamom.
  • Vanilla bean paste – A big flavor boost for the cake. If you don’t have vanilla bean paste try vanilla extract.
  • Apple fruit filling – The apple pie fruit filling can be found in the baking aisle of the grocery store.

How to make apple pie coffee cake

This cake is so easy to make you’ll be happy you stumbled upon this recipe!

  1. In a large mixing bowl add white cake mix, eggs, sour cream, apple pie spice, and vanilla bean paste.
  2. Mix together for 2 minutes until light and fluffy. This batter will be a bit thicker than a typical boxed mix.
  3. Add to a 9×13 baking dish and top with apple fruit filling.
  4. Bake, cool, glaze, and devour!

Well, you’re in luck! This recipe works perfectly with cherry, peach, or even blueberry fruit filling.

  • Pair ground ginger with peach fruit filling
  • Use cherry fruit filling with almond extract and sliced almonds sprinkled on top
  • Try butter cake mix with the blueberry fruit filling to mimic the flavors of a blueberry muffin
  • Bring in even more flavor by using a spice cake mix with apple fruit filling

Storage and leftovers

This cake can be stored covered in the refrigerator for up to 3 days. The reason you need to store this cake in the fridge is the apple fruit filling will bring in a lot of moisture so it risks going bad if it sits on the counter.

Ingredients

For cake:

  • 15.25 ounce box white cake mix
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup whole milk
  • 2 teaspoons apple pie spice
  • 1 teaspoon vanilla bean paste
  • 21 ounce can Lucky Leaf apple fruit filling

For glaze:

For cake:

  • Preheat oven to 350 degrees F and spray a 9×13 baking dish with non-stick cooking spray.
  • In the bowl of an electric mixer, or in a large mixing bowl, add cake mix, eggs, sour cream, milk, apple pie spice, and vanilla bean paste.
  • Mix on medium speed for 2 minutes either in your stand mixer or using a hand held mixer.
  • Add the batter to the prepared pan.
  • Top the batter with the apple fruit filling. Making sure to evenly distribute the fruit filling over the top of the batter.
  • Add to the preheated oven and bake for about 35 minutes or until the cake is fully cooked and set.
  • Drizzle with glaze and let cool.

For glaze:

  • Add all ingredients to a bowl and whisk together until smooth. If the glaze is too thick add more milk, if the glaze is too thin add more powdered sugar.
