Sometimes I make fun of my husband for his extreme love of eggs. If I make hard boiled eggs he will gladly eat them for breakfast, lunch and before dinner snack. Now, while I do enjoy hard boiled eggs I just don’t enjoy them as much as the hubs. I love the white part but the dry yolk just sorta grosses me out. However, if the hard boiled egg is in deviled form all bets are off. I can down deviled eggs like they are going out of style.

Like a moth to a flame is my mouth to a deviled egg.

Oh wait, that’s a totally gross analogy.

It’s almost as bad as meat heat. Ugh. Sweet baby J I said it again.

Last month I started working Jones Dairy Farm {did you catch my pineapple bourbon butter glazed ham?} so I used some of there super delicious bacon to add to these bad boys. Salty crispy bacon. Does life get any better? Plus I paired the bacon with blue cheese. It’s like a match made in egg heaven.

The sriracha is an optional ingredient but I really feel like anytime sriracha is in the ingredients list it’s not really optional. Who doesn’t love sriracha? Who doesn’t want to bathe in its spicy garlic goodness. Well, maybe not bathe. That could be painful…and slightly odd.

Good lord my post is all over the place today.

Mouth loving deviled eggs –> meat heat –> bathing in sriracha.

I think I should probably not write at night. While hopped up on Benadryl. While half asleep.

Bacon Blue Cheese Deviled Eggs

These bacon blue cheese deviled eggs are the perfect summertime BBQ addition. Full of flavor and packed full of crunchy bacon. What's not to love?

Yield: 12 deviled eggs

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

  • 6 hard boiled eggs
  • 6 sliced bacon, crispy cooked and chopped
  • 1/3 cup mayonnaise
  • 1/3 cup crumbled blue cheese
  • 1/2 teaspoon brown mustard
  • 1/2 teaspoon sriracha (optional, but it's sriracha so it's awesome)

Directions:

Carefully cut eggs in half and remove the yolk.

Add the yolk to a bowl of an electric mixer and add in almost all the bacon (save some for sprinkling on top), mayonnaise, blue cheese, brown mustard and sriracha.

Mix on low until combined and creamy.

Fill the eggs (where the yolk was previously) with the egg yolk mixture and sprinkle with remaining bacon.

Keep cold until ready to serve.
