Baked Brown Rice

This baked brown rice is the easiest way to make rice. No more burnt rice on the stove top. After 60 minutes of baking you’re rewarded with soft fluffy rice.

A couple of  weeks ago I was lucky enough to win a giveaway from Elissa of 17 and Baking. If you haven’t checked out her blog you should run right on over. I’m still amazed at her wonderful recipes and photography.  She has a lot of talent for a seventeen-year-old. It blows me away. Now back to the giveaway. Last week I finally received my gift – A small jar of her homemade Mojito Jelly. Yum! I couldn’t wait to try it.
She sent a very sweet letter along with the jelly saying her family enjoyed the jelly on pork, shrimp and crackers with brie. I decided that I couldn’t resist the chance to spread this jelly over a juicy pork steak. I also knew I wanted to grill the pork but that is where I ran into a small problem. My boyfriend and I have a grill but it’s currently stored at his mother house over two hours away. Not really convenient when you want to grill right now. So instead I grabbed my little George Foreman and hoped for the best.  I don’t know why I doubted the GF because the pork turned out beautifully. I basted the pork a couple different times while it was cooking and ended up creating a nice flavorful glaze over the pork. The jelly was not overpowering and left just the right amount of mint and lime flavor.

I wasn’t sure what to make as a side with my new pork chops but I settled on a household favorite. Baked brown rice…Alton Brown style. Until I found this recipe I didn’t make a lot of rice. I’m one of those people who were not blessed with the ability to make good rice. I always ended up overcooking or under cooking the rice – not good. So the great thing about this recipe is that the rice ends up being perfectly made with very little hassle. Always a plus in my book. I really like the brown rice plain but I’m sure it would take nicely to any added ingredients.

Baked Brown Rice

This baked brown rice is the easiest way to make rice. No more burnt rice on the stove top. After 60 minutes of baking you're rewarded with soft fluffy rice.

Yield: 8x8 dish

Prep Time: 5 minutes

Cook Time: 70 minutes

Total Time: 75 minutes

Ingredients:

  • 1-1/2 cups brown rice
  • 2-1/2 cups water
  • 1 tablespoon unsalted butter
  • 1 teaspoon kosher salt

Directions:

Preheat the oven to 375 degrees F.

Place the rice into an 8-inch square glass baking dish.

Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.

After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.
