Banana Bread Granola

This banana bread granola is packed full of gluten free oats, mashed bananas, banana chips, dark chocolate chips and lots of cinnamon spice. Plus it taste just like fresh baked banana bread!

You know what I love? Breakfast.

You know I hate? Cooking breakfast.

If I had my way I would just eat bowl after bowl of peanut butter Cap’n Crunch every single morning. Except then the roof of my mouth of be tore up and I would go broke because cereal is freaking expensive.

Don’t get me wrong. I really love hot breakfast but as I have said about a million times on my blog I hate cooking in the morning. I have decided that if I win the lottery I would just hire someone to cook breakfast for me.

Every. Single. Day.

Now, because I have yet to win the lottery (I should probably start playing) I still have to figure out how to feed myself in the morning. That’s where this banana bread granola comes into play. It’s easy to make, tastes good on top of protein packed yogurt and actually tastes like banana bread.

How crazy is that?

Plus you probably have all the ingredients just hanging out in your pantry RIGHT NOW! Well except maybe the banana chips. That you might have to pick up at the store…or you could just call your husband and make him pick up the chips.

Whatevs.

So you wondering what in this big bowl of deliciousness?

Gluten free oats, pecans, mashed bananas, cinnamon, Truvia brown sugar blend, banana chips and dark chocolate chips. Yeah, how good does that sound?

Sooooooo get your butt into the kitchen and make this granola. Stat!

Banana Bread Granola

This banana bread granola is packed full of gluten free oats, mashed bananas, banana chips, dark chocolate chips and lots of cinnamon spice. Plus it taste just like fresh baked banana bread!

Yield: 3 cups

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

  • 2 cups gluten free rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup mashed bananas
  • 1/4 cup Truvia brown sugar blend
  • 1/4 cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 1 teaspoons ground cinnamon
  • Pinch kosher salt
  • 1/2 cup chopped banana chips
  • 1/3 cup mini dark chocolate chips

Directions:

Preheat oven to 300 degrees and line a rimmed baking sheet with parchment paper or silpat liner.

Add rolled oats and pecans to medium sized mixing bowl, set aside.

In a small mixing bowl whisk together mashed bananas, Truvia brown sugar blend, coconut oil, vanilla extract and ground cinnamon.

Pour banana mixture over oat mixture and stir to combine and equally coat.

Add mixture to the prepared baking dish and sprinkle the top with a pinch of kosher salt.

Add to the oven and bake for about 30-40 minutes making sure to stir every 10 minutes so the granola does not burn. You know your granola is ready to remove from the oven after it's brown and lightly toasted.

Let the granola cool for about 10 minutes and stir in banana chips and chocolate chips.

Stir to combine and let completely cool.

Serve overtop yogurt, sprinkled on oatmeal or eat by the handful.
