Bay Scallop Ceviche

This totally delicious bay scallop ceviche is easy to make and makes the perfect summertime appetizer. Fresh, light and packed full of citrus flavor.

Here are some random things I have been thinking lately:

1. I’m slightly obsessed with re-watching 30 Rock.

2. I think I very well could be best friends with Mindy Kaling. But I really need to think of a way to lure her into meeting me. Wait. Maybe friendships shouldn’t start off with luring….

3. Candice Cameron Bure is my current favorite celebrity to follow on Instagram. How is it possible for D.J. Tanner to have 3 children?

4.  I have been really wanting to watch Don’t Tell Mom the Babysitter’s Dead but I cannot buy it from Amazon {in streaming form} and refuse to buy DVD’s since it seems so 2000. I realize this is a first world problem but seriously, I really want to hear “I’m right on top of that Rose!”

5. I still don’t understand that picture floating around Facebook where they talk about the “new” common core math. I have read it about 20 times and I just don’t get it.

6. I have been getting these shellac manicures and I’m pretty sure my husband is ready to cut my nails while I’m sleeping because I’m always clicking them on the table. I have always had short nails so the second I get a nail I tap, tap, tap away.

7. I have such a weird craving for Polar Eggnog Seltzer that if they don’t bring it back this year I’m debating blasting them on Twitter all winter long.

8. Speaking of winter – Hobby Lobby has Christmas stuff in the stores. Seriously Hobby Lobby?  Seriously?

9. Facebook makes it really hard to daydream about impressing your old classmates when your friends with all of them on FB. Instead I’m neurotically checking my tagged pictures to make sure I don’t look like a beast. I don’t want my old HS crush to see me looking like a hot mess.

10. I had something else written here but deleted it for fear of backlash. You should know that I wrote this post on Benadryl.

    I only liked the breast when I was a kid. Now my husband and I fight over the thighs if I make a whole chicken. We would be fighting over all of your chicken thighs, too. The flavor in this recipe is fantastic.

    Dark meat really does have more flavor. I love that it’s flavored with cilantro and lime (my favorite) and that crispy skin looks incredible!

    I love chicken thighs. I am more of a dark meat kind of girl so they just work better for me. I love that dark, crispy skin you got on there and I bet these flavors are perfect together. Must make!!

    Oh my gosh – that skin is the bomb (yeah I said it)! You know what’s funny? If I’d let her, my daughter would eat ONLY the skin and leave the meat for somebody else. She’s a skin thief when it comes to poultry…gotta have your fork poised and ready lest you lose it at Thanksgiving… 😉
