These brown butter peach muesli bars are the perfect way to start your day. Fresh fruit paired with nutty brown butter and gluten free muesli. What more could you want?

Hi. My name is Brandy and I’m addicted to brown butter. I know I don’t talk about it a lot here on Nutmeg Nanny but it’s mostly because when I fall off the brown butter wagon I go hard. I all of a sudden want it in EVERYTHING. Mashed potatoes? Sure, why not? Toast? Oh heck yeah!

You get the point. I have zero self-control or respect for myself. It’s bad.

These sweet little fruit bars obviously include brown butter but I threw in a little peaches, muesli, pecans {thanks Fisher Nuts!} and vanilla bean to even things out. Dare I even say that these babies are good enough to be served as breakfast? I really had a hard time figuring out whether I would classify these as a dessert or a breakfast. I mean I know I would eat them for breakfast but I’m not really a “real” adult. I eat ice cream for breakfast and I still think to myself “That’s right dad. I’m eating ice cream, for breakfast! Take that!”

I’m really not an adult. I’m just a big kid with power.

*Note* I used Bob’s Red Mill gluten free muesli because I was given a bag when I attended The Big Summer Potluck. I’m not sure how this recipe would turn out with non-gluten free muesli but if you give it a try please let me know! Also, plain rolled oats will work beautifully in this recipe too. Brown Butter Peach Muesli Bars

These brown butter peach muesli bars are the perfect way to start your day. Fresh fruit paired with nutty brown butter and gluten free muesli. What more could you want?

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 60 minutes


For bars:

  • 1-1/2 cup gluten free muesli
  • 3/4 cup white whole wheat flour
  • 3/4 cup dark brown sugar
  • 1/4 teaspoon kosher salt
  • 1 teaspoon apple pie spice
  • 1 teaspoon vanilla bean paste
  • 1/2 cup unsalted butter
  • 2 cups chopped peaches, peeled and pitted
  • 1/2 cup chopped pecans

For glaze:

  • 1 cup powdered sugar
  • 2 teaspoons vanilla bean paste
  • 1/4 cup milk (more or less may be needed)

For bars:
Preheat your oven to 350 degrees and line a 9x9 glass dish with parchment paper, set aside.

In a large bowl add muesli, white whole wheat flour, dark brown sugar, kosher salt and apple pie spice. Mix together and set aside.

In a small skillet add you butter and melt over medium heat. Continue cooking until the bubble starts to foam and you see small brown bits in the bottom of your pan. You might also notice a sweet nutty smell.

Pour your browned butter into your muesli mixture, add vanilla bean paste and stir until moistened. Fold in peaches and pecans.

Pour your mixture into your prepared dish and bake 30-40 minutes. This will all depend on how much moisture your peaches brought to the mixture. It will be ready when it's firm and feels set.

Let the mixture cool completely before cutting. When you are ready to serve drizzle with glaze.

For glaze:
In a small bowl add powdered sugar, vanilla bean paste and 2 tablespoons of the milk. Mix until the powdered sugar starts melting. Gradually add in more milk until you have reached your desired consistency.
