It’s crisp time! I’m so ready for fruit season that I could not wait to post this recipe. I actually made this crisp last year but ran out of time to post it SOOOOOO I’m posting it now. Plus posting this sends out all those “FOR THE LOVE OF EVERYTHING HOLY CAN IT JUST BE SPRING ALREADY” vibes. I mean, I know I have been complaining about the weather pretty much non-stop but I just need my windows open. Why can’t mother nature understand that?
Plus it snowed 6 inches yesterday. So rude.
So while I can’t run away to somewhere warm I’m going to just stare at this dessert and imagine it’s warm. It’s the little things in life that bring small doses of happiness.
Now, onto things that do not make a total whiner. I finally hired a house cleaner so I no longer have to worry about the state of my bathroom when guests come over, I’m getting a quote to paint the whole house AND I had a fantastic customer service experience. To be honest, even with the snow on the ground it was a pretty good day.
Oh, and that customer service thing? Well, my most favorite sheets had a clearance sale and I bought the wrong size bottom sheet! I knew I couldn’t send them back because they were clearance BUT they told me if I donated the sheet they would send me the correct size! YES! One point for Brooklinen! Not only are their sheets amazing they are amazing!

Ok, back to this crisp. It’s packed full of fresh plums and mixed with vanilla bean paste and cardamom and then topped with the perfect crunchy rolled oats and hazelnut topping. It’s so good and even better when you eat it straight from the oven. Is there anything better than fresh warm crisp straight from the oven?
Cardamom Vanilla Plum Crisp
This cardamom vanilla plum crisp is filled with juicy plums and topped with a crunchy oatmeal hazelnut topping. It's the perfect sweet treat to end the day with a perfect hint of vanilla bean and cardamom flavor.

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
For topping:
- 1/2 cup quick or old-fashioned oats
- 1/3 cup dark brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup chopped hazelnuts
- 4 tablespoons unsalted butter, room temperature
- 1 teaspoon cardamom
- 1/2 teaspoon baking powder
- Pinch kosher salt
For filling:
- 1-1/2 pound plums, pitted and sliced
- 3/4 cup dark brown sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons vanilla bean paste
Directions:
Preheat oven to 425 degrees and spray an 8x8 baking dish with non-stick spray, set aside.
For topping:
Add all ingredients to a mixing bowl and mix together until crumbly and the butter is evenly distributed. Set aside.
For filling:
Mix all together and add to the prepared baking dish. Top with oat topping and bake for about 25-30 minutes or until the topped is browned and the fruit is tender.
Serve warm or room temperature.
