Ingredients

For cherry jam:

  • 12 ounces frozen pitted red cherries
  • 1/4 cup orange juice
  • 1/4 cup maple syrup

For French toast cups:

  • 4 large eggs whisked
  • 1 cup low fat milk
  • 1 6 ounce container Yoplait cherry orchard yogurt
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon kosher salt
  • 6 slices large whole grain bread about 4 cups
  • 1/2 cup sliced almonds

Instructions

For the cherry jam:

  • Add all ingredients to a medium-sized pot and simmer over medium heat.
  • Cook for about 30 minutes or until cooked down and thick.
  • Jam can be made the day before.

For French toast cups:

  • Preheat the oven to 350 degrees F and spray a 12-count muffin tin with non-stick spray.
  • In a large bowl add eggs, milk, yogurt, vanilla bean paste, almond extract, and kosher salt. Whisk to combine.
  • Add in the bread and toss to coat. Let the mixture sit for about 5 minutes so the bread has time to soak in the milk.
  • After resting stir in the almonds.
  • Add bread mixture into the prepared muffin tin and fill each one about half full.
  • Place about 1 tablespoon of the cherry jam on top of each cup and then top with the remaining bread mixture.
  • Bake for about 35 minutes or until fully set.
