Chicken Avocado Cilantro Lime Soup

This chicken avocado cilantro lime soup is the perfect cold weather fix. It’s packed full of vegetables, spices, rotisserie chicken and topped with creamy Hass avocado. It’s ready in just 35 minutes so it’s the perfect weeknight comfort meal.

Is it weird that I’m happy February is almost over? I feel like February is the peak of winter blah. It’s always so cold, so gray and always sooooooooo close to spring. Once we hit March I start dreaming of open windows and wearing flip flops. Seriously, the start of flip flop weather is the start of my daily good moods! However, we are still in February which means I’m cold all. the. time. Luckily for me, I just drown my sorrows in soup. I make it for dinner at least once a week and then live off it for lunch for the rest of the week. It’s my winter feeding cycle.

Now, while I love all kinds of soup, my heart really has a soft spot for brothy soups. Soups that are full of goodness, but also reward me with lots of deliciousness to slurp up. And if you’re anything like me, you’re going to LOVE this soup! It’s full of vegetables, shredded chicken, spices and a super limey broth. Then, because I’m no fool, I added in lots of fresh Hass avocado and a sprinkling (or two) of cilantro. You guys – YASSSSSSSSS!

Of course, I didn’t just make this soup on a whim – nope. I partnered with the Hass Avocado Board to help spread the word about their new partnership with the American Heart Association and their Healthy for Good movement. They are on a mission to help get Americans on board with eating their daily recommended amounts of vegetables and fruits. By doing this the hope is that it will decrease the likelihood of cardiovascular disease, strokes, and diabetes.

If you haven’t jumped on the avocado train you need to get to it fast! Fresh avocados are a heart-healthy fruit. They provide naturally good fats, are low in saturated fat, and are cholesterol- and sodium-free, and just plain taste delicious! And they are pretty awesome on top of this soup, too. It’s the perfect creamy element to this super brothy soup.

Chicken Avocado Cilantro Lime Soup

This chicken avocado cilantro lime soup is the perfect cold weather fix. It’s packed full of vegetables, spices, rotisserie chicken and topped with creamy Hass avocado. It’s ready in just 35 minutes so it’s the perfect weeknight comfort meal.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes


  • 1 tablespoon olive oil
  • 1 cup diced bell pepper
  • 1 cup diced yellow onion
  • 2 jalapeños, seeded and minced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 32 ounces low-sodium chicken stock
  • 3 cups shredded cooked chicken
  • 1/3 cup minced cilantro
  • 2 limes, juiced (½ cup)
  • 4 fresh Hass avocados*, halved, pitted, peeled and cubed


In a large soup pot, add olive oil over medium-high heat. Once the oil is hot, add bell peppers, onion and jalapeño. Cook until the onion is translucent and the vegetables are starting to soften.

Add garlic, chili powder, smoked paprika and cumin. Stir to combine and cook for another 30 seconds just until the garlic is fragrant.

Add chicken stock and shredded chicken. Bring to a boil and then lower the heat and simmer for 15 minutes to help combine the flavors.

Right before serving, add the cilantro and lime juice and stir to combine.

To serve, add cubed avocado to a bowl and spoon the soup over top.

Serving suggestion: Top with additional chopped cilantro, lime slices and tortilla chips if desired.

*Note: Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly.
