Listen, I’m going to be that person. The person who complains that the weather is too cold and it’s unfair. Yes, I know it’s January. Yes, I know I live in New York. Yes, I know I’m ridiculous. Yes, I don’t care. I’m not wanting it to be like Florida right now BUT I would be happy if it could get above freezing for at least one day this week. Not only am I freezing but my cats are giving me death stares if I don’t plug in the electric blanket and heat up their Snuggle Safe.

Personally, I wish my life revolved around electric blankets and Snuggle Safes. I feel like I could really thrive and live my best life as a cat. Well, a spoiled cat. Not a cat that lived on the street. That would not work for me. I like comfy things.

Since I can’t just magically become a cat (but really it would be awesome if I could!) I’m gonna just sit around in my fleece pants and eat all the warm cozy food. Of course, there are a lot of options when it comes to cozy food but at the top of my list is soup and chili.

I usually call chili a soup but there are some people who have hard and fast opinions on how chili isn’t soup and personally I’m just too cold to get into that argument.

This chipotle ground turkey chili is big on flavor and pretty good for you too! I used extra lean ground turkey and then added in lots of dried spices and chipotle peppers to bulk up the flavor. Oh, and I threw in black beans and kidney beans because I’m a 2 different type of beans chili lover. If you remember the one pot Cajun chicken and rice and the sweet potato black bean bowls I made a few months ago for Mrs. Grimes Beans I used up the last of their beans in this chili.

Now, for topping this chipotle ground turkey chili I went straight up chili classic. I threw on a little shredded cheese, a dollop of plain Greek yogurt and just a sprinkle of fresh cilantro. Oh, and because I love all things crunchy I seized the opportunity to use up the open bag of sweet potato tortilla chips – YAS!

Chipotle Ground Turkey Chili

This chipotle ground turkey chili is packed full of healthy deliciousness with just a touch of chipotle pepper heat. Super simple to make and ready in just an hour! How simple is that?

Cook Time: 50 minutes

Total Time: 60 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cups diced bell pepper
  • 1 pound ground turkey
  • 4 cloves garlic, minced or grated
  • 2-4 whole chipotle peppers in adobo sauce, minced*
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 32 ounces chicken stock
  • 2 (14 ounce) cans fire roasted diced tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles
  • 2 cups frozen sweet corn kernels
  • For topping - shredded cheese, Greek yogurt, minced cilantro or tortilla chips

Note: Add more chipotle peppers based on your love of spicy food.

Directions:

In a large pot add olive oil and set over medium high heat. When the oil is hot add in the diced onion and bell pepper. Cook for about 5 minutes or until the onion starts to turn translucent.

Add in the ground turkey, garlic cloves, minced chipotle peppers, chili powder, ground cumin, smoked paprika and dried oregano. Break down the turkey with a spatula into small pieces and stir to combine to make sure the spices are equally coating the meat and vegetables. Cook for about 10 minutes to help brown the meat.

Add in the chicken stock, diced tomatoes with their juice, black beans, red kidney beans, diced green chiles and corn kernels. Stir to combine.

Let simmer over medium heat for about 35 minutes or until thick and flavorful.

If desired top with shredded cheese, Greek yogurt, minced cilantro and tortilla chips.

I made this recently and the flavor was good, but I would definitely call it a soup and not a chili. Traditional chili in Texas (my home) is quite thick. I removed about 2 cups of liquid to get the consistency I wanted. Next time I will just reduce the broth. Great recipe though and it made enough to eat for lunches for the week!

thank you for this recipe. love chili and love to see new versions, at least to me, haven't made a chipotle version before, love all of the other ingredients too, and all of these other bowl recipes too (love sweet potatoes!)
