You guys, summer is almost over and I’m sad. While I’m not a fan of intense heat or sweating I do love the whole outdoor aspect of summer. I love being able to sit outside and just enjoy the weather. I wanna sit at a table, drink some bubbly and nibble on all the delicious snacks. Seriously, I spend so much time with my friends during the summer that I crave that type of interaction when the yard is covered in snow and I can’t go outside without freezing.

Luckily for me, I have about 2 more months of warm weather and I plan on soaking up every. last. minute.

When I was asked to team up with Riondo Prosecco I jumped at the chance to showcase my favorite ways to live up summer. This year I’m all about bubbly Prosecco and my love of olives is growing. Listen, back in the day if you tried to give me an olive I would have thrown it back into whatever bowl you pulled it from. Now that I’m older I find my tastes are changing and olives seem to have gone from “yeah, never” to “yeah, those aren’t that bad.”

And since these garlic herb roasted olives are baked with olive oil, fresh thyme, garlic, crushed red pepper and then finished with orange zest and orange juice I’m head over heels in LOVE with these babies. Plus, they are so crazy delicious when served warm. Who knew warm olives were so good? Luckily I figured this out and now I’m here to share them with you!

Oh, and guess what? Olives and Riondo Prosecco are BFF’s. Sweet bubby Prosecco with citrusy briny olives – OMG I want it all! I mean, I’ll share because I’m nice but really I want it all to myself. Ohhhhhh and please be sure to warn your guests if you make these olives with pits. No one wants to be surprised with a pit!

Garlic Herb Roasted Olives

These garlic herb roasted olives are the perfect snack food! They are salty, packed full of garlic, thyme and orange flavor and are ready in just 15 minutes! They pair perfectly with prosecco and will be sure to impress all the olive lovers in your life.

Yield: 4 servings

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

  • 4 cups mixed olives (I used castelvetrano, large green Sicilian, nicoise, and kalamata)
  • 1/4 cup extra virgin olive oil
  • 6 sprigs of thyme, leaves removed
  • 4 garlic cloves, thinly sliced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 orange, zested
  • 1/2 orange, juiced

Directions:

Preheat oven to 400 degrees.

On a rimmed baking sheet add olives, olive oil, thyme leaves, sliced garlic and crushed red pepper flakes. Stir to combine and evenly coat.

Add to the oven and bake for 10 minutes.

Remove olives from the oven and cover the olives with orange zest and orange juice. Toss to combine.

Serve warm or room temperature.
