This ginger peach crisp is full of flavor and the perfect use for all your summer peaches. The ginger twist packs a punch in the flavor department and is delicious served plain or with a giant scoop of ice cream.
The other day at the gym we were talking about peaches and how they are one of the best summer friends.
We all talked about our favorite ways to enjoy them and in the dessert category, I was straight-up torn between peach crisp or peach ice cream.
Peach ice cream is a straight-up nostalgic love for me. My grandfather would have it at most family gatherings and it was always the kid’s job to churn the ice cream. However, crisp is a straight-up all my life love.
It’s so easy to make and is so good eaten fresh out of the pan. Especially the edges because I love how the topping gets extra crispy.
I also think that peach crisp tastes even better with a giant scoop of ice cream on top – so good!

How do I pick perfect peaches for dessert recipes?
It can be overwhelming when you’re picking out fruit.
Do you want the peach to be super soft? Hard? Is bruising bad?
Don’t worry.
When picking our peaches you’ll want to look for large, round peaches, that feel heavy for their size. The flesh should look very peach in color with hints of red. If you notice green on the peaches that means it was picked too soon. They should give a little when lightly squeezed but not mushy or overly soft.
If you notice a lot of bruising it might make for a good processing peach (why not make vanilla honey peach butter?) but it will likely be too mushy for eating out of hand.
A few light bruises are ok for putting into a peach crisp since you’ll be baking it and the peaches will get soft while baking.
How do I store this ginger peach crisp?
If you’re likely to consume the crips within a few days you can just keep it on the counter covered with plastic wrap or foil.
You can also store it in the refrigerator to give yourself a few more days.
If your home is very warm or you’re likely to get ants (gross I know but let’s face it happens) it’s important to store the leftover crips in the refrigerator.
I also love to microwave the crips for about 30 seconds before serving. It helps freshen up the flavor.

Ginger Peach Crisp
Ingredients
Topping
- 1/2 cup quick or old fashioned oats
- 1/3 cup dark brown sugar
- 1/4 cup all-purpose flour
- 4 tablespoons unsalted butter room temperature
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- Pinch kosher salt
Filling
- 2 pounds peaches cut into 1/2 inch slices
- 1/3 cup dark brown sugar
- 1 tablespoon lemon juice
- 1 tablespoon grated ginger
- 2 teaspoons vanilla bean paste
- 1-1/2 teaspoons cornstarch
Instructions
Topping
- Add all ingredients to a mixing bowl and mix together until crumbly and the butter is evenly distributed. Set aside.
Filling
- Preheat oven to 425 degrees and spray an 8x8 baking dish with non-stick spray.
- Mix all together and add to the prepared baking dish.
- Top with oat topping and bake for about 25 minutes.
- Serve warm or room temperature.
