Goat Cheese Prosciutto Blackberry Phyllo Bites

These goat cheese prosciutto blackberry phyllo bites are a delicious addition to any holiday party – tangy goat cheese mixed with cream cheese, chives, crispy prosciutto and topped with a fresh blackberry. This fun appetizer is the perfect little 2 bite treat!

I’m a sucker for all things appetizers. I could happily make my whole dinner just snacking on 1 and 2 bite treats. These little goat cheese prosciutto blackberry phyllo bites taste like someone took a fancy cheese ball and wrapped it in a crispy shell and topped it with a sweet little berry. It’s the best of all worlds and, as much as I hate to say this, a party in the mouth.

I know, so cliche.

I teamed up with Athens to bring you this recipe and just like all my other phyllo bite treats they are CRAZY GOOD! I’m getting ready to go home for a holiday visit and I’m 100% making this appetizer at our annual “Sangria and Prime Rib Extravaganza” party.

Which really is an excuse to eat all the food and drink all the drink. Well, not really drink all the drink. I only make sangria.

This year there is going to be 17 people crammed into my dad’s house and it’s gonna be REALLY COZY. Today I was on the phone with my dad trying to figure out where everyone will sit. Don’t worry if you’re part of my family and friends reading this post – you’ll have plenty of space and there is ALWAYS enough food.

Including these little bites that are definitely happening.

The best part about these bites is that they no bake and only use 6 ingredients. SO SIMPLE! The Athens mini fillo shells are precooked so unless you want them super toasty (which is fine if that’s your thing) you don’t even have to pop them in the oven. PLUS they can be stored room temperature or in the freezer.

I think my favorite part of this little appetizer is the cute little blackberry on top. I LOVE blackberries and they bring the perfect amount of sweetness to the salty combination of goat cheese and crispy prosciutto.

Goat Cheese Prosciutto Blackberry Phyllo Bites

These goat cheese prosciutto blackberry phyllo bites are a delicious addition to any holiday party - tangy goat cheese mixed with cream cheese, chives, crispy prosciutto and topped with a fresh blackberry. This fun appetizer is the perfect little 2 bite treat! 

Yield: 30 bites

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

  • 30 Athens mini fillo shells
  • 1/4 pound thick sliced prosciutto, small dice
  • 4 ounces goat cheese
  • 4 ounces cream cheese
  • 2 tablespoons sliced chives
  • 30 fresh blackberries

Directions:

On a large platter layout mini fill shells.

Add prosciutto to a medium-sized skillet and set over medium-high heat. Cook for about 5 minutes to or until the meat is slightly crispy. Remove from the heat and let cool.

In a mixing bowl add goat cheese, cream cheese, sliced chives and cooled prosciutto. With an electric mixer mix until fully combined.

Fill each mini fillo cup with an equal amount of filling (about 1 teaspoon per shell) and top with a fresh blackberry. Garnish with more sliced chives if desired.
