Greek Topped Hummus

This Greek topped hummus is packed full of flavor. Topped with spiced lamb, cucumber, red onion, pine nuts, feta cheese, mint and a sprinkling of sumac. Serve with pita chips and DIG IN!

So I started something new. I’m now lifting weights. Yes, me the girl you loves Little Debbie treats, Doritos and diet coke is powerlifting. I’ve only been to one class and it KILLED me. Who ever thought to themselves “I think a great workout should be squatting up and down a million times” should be throat punched. Dear lord my legs hurt so bad that I literally sigh every time I thought about going up and down the stairs. In fact on the first day, I went to leave my house and toppled down my stairs because my legs were basically jello. As much as I hate being rotund I’m not a huge fan of jello legs either.

However, I’m getting my act together and going to work out again today. Please wish me luck. My legs will take all the good vibes you can send their way.

One thing I didn’t expect after working out is the EXTREME hunger I would feel. EXTREME. EXTREME. EXTREME. I know I just basically screamed at you but I was so hungry I thought I was going to have a hangry breakdown in the middle of the grocery story. Luckily for everyone at the store, I managed to slightly keep it together.

Then I bought a steak, came home and pan fried it and served it along side a giant helping of broccoli. It was beyond the most amazing lunch in the history of lunch.

Even after eating that HUGE lunch I was still starving by dinner time. You should know that dinner time in our house is one of two things – relaxed or rushed. Since I work from home I cook 99.9% of the time and by the time Art gets home he is beyond starving. So I teamed up with Sabra to introduce you to the unofficial meal. We are big time unofficial meal eaters in our house. If you’re thinking “what in the heck is an unofficial meal?” I’m here to explain. The unofficial meal is the meal you eat while you’re making the official meal. The meal where you all dig in, the meal where you fight for the last chip to scoop up ALL THE DIP!

This delicious Greek topped hummus is the perfect addition to your unofficial meal. I made my ground lamb fresh but dishes like this are perfect for using up leftover meat. It’s packed full of Greek flavors and is perfect when scooped up with crispy pita chips and cucumber slices.  It’s topped with spiced lamb, crunchy vegetables, feta cheese and toasted pine nuts. The sprinkling of sumac is not required (especially if you can’t find it) but if you can get your hands on sumac it’s highly recommended!

Think of the unofficial meal as your at home appetizer. Your at home time to gather in the kitchen, catch up on your day all while stuffing your face meal. I’m pretty the unofficial meal might just be my favorite meal of the day.

Greek Topped Hummus

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

  • 1/2 pound ground lamb
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon smoked paprika
  • 1 (10 ounce) container classic hummus
  • 1/4 cup diced cucumbers
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons toasted pine nuts
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh oregano
  • 1/2 teaspoon sumac (more or less can be used)
  • For dipping: pita chips and cucumber slices

Directions:

Set a small skillet over medium heat and add in ground lamb, coriander, cumin, kosher salt, cinnamon, allspice and smoked paprika. Cook until fully browned. Drain off any fat that is in the skillet.

Add hummus to a platter and spread out so you leave a well in the center for all your toppings.

Top with ground lamb, cucumbers, red onion, feta cheese, pine nuts, chopped mint, chopped oregano and sprinklings of sumac.

Serve with pita chips and cucumber slices.

Note: You can adjust your toppings based on your personal preferences. Feel free to add more or less cucumbers, red onion, sumac, etc. It's up to you!
