These grilled chicken meatball and peppers skewers are the perfect grilling kebab dinner. Made easy with store bought meatballs and fresh chopped bell peppers with a mix of herbs and oil. Sprinkle with Parmesan cheese for a delicious finish!

This is a sponsored post written by me on behalf of Cooked Perfect® Fresh Meatballs. All opinions are 100% mine.

I have a real love/hate with skewers and kebabs. Usually, when I got to make them it takes me FOREVER to put the whole thing together and then I have major issues with the vegetables and the meat being done at the same time. Well, I solved ALL my problems by picking up Cooked Perfect Fresh Meatballs Italian Style with Parmesan and Mozzarella and pairing them with fresh chopped bell peppers. I mean, I guess I should say that the meatballs are fresh and fully cooked so you don’t have to worry about the whole “MY VEGETABLES ARE BURNING BUT MY MEAT ISN’T FULLY COOKED” debacle with a lot of grilled kebab situations.

Oh, and if you’re not a fan of this flavor of meatballs don’t worry. Cooked Perfect Meatballs come in 5 other flavors – Italian Style beef & pork, Korean BBQ beef & pork, Sundried Tomato & Roasted Garlic chicken, Spinach and Feta with Parmesan & Mozzarella chicken or Taco Seasoned glazed beef and pork meatballs. There is literally an option for everyone!

Want to know another great secret about these meatballs? They are perfect when eaten straight off the skewer OR pulled off and stuffed into a big hoagie roll. Wait, off topic for a second – hoagie roll, grinder roll, sub roll or hero roll? Honestly, they all annoy me and I never know what to say. I feel like New York prefers the term “hero” but in Ohio, we always said, “sub.” Don’t even get me started on how my Connecticut born and raised husband says grinder – THE WORST.

Ok, back to meatballs. Another great thing about these meatballs is that if your week is super busy (and dinner is the last thing on your mind) these Cooked Perfect Meatballs can be microwaved right in their pouch! Oh, and each package comes with 2 easy recipe ideas. Listen, they’re making it easy to get dinner on the table FAST.

Since I’m a huge fan of grilling (and I’m willing summer to show up ASAP) that is why I went the grilling route. It’s just such a fun twist to traditional meatball dishes. Plus I weirdly find it therapeutic to make the skewers. All I need in life is a hot grill, some skewers, some meatballs and a bad Lifetime movie playing to make me happy.

I’m a simple girl.

Grilled Chicken Meatball and Peppers Skewers

These grilled chicken meatball and peppers skewers are the perfect grilling kebab dinner. Made easy with store bought meatballs and fresh chopped bell peppers with a mix of herbs and oil. Sprinkle with Parmesan cheese for a delicious finish!

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 2 (12 ounce) packs Cooked Perfect Italian Style Chicken Meatballs with Parmesan and Mozzarella
  • 1 large red bell pepper, seeded and cored, 2-inch chunks
  • 1 large yellow bell pepper, seeded and cored, 2-inch chunks
  • 1 large orange bell pepper, seeded and cored, 2-inch chunks
  • 1 large green bell pepper, seeded and cored, 2-inch chunks
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, grated
  • 2 teaspoon minced fresh oregano
  • 1 teaspoon kosher salt
  • Grated Parmesan cheese, for topping

Directions:

If you’re using large wooden skewers soak them in water for at least an hour before assembly. If you’re using metal skewers skip this step.

Before you’re ready to assemble preheat your grill to medium-high heat.

Assemble the skewers in the following order: 1 meatball, 3 pieces of bell pepper, 1 meatball, 3 pieces of bell pepper and 1 meatball.

Since there are not enough meatballs to make all the skewers 3 meatballs per piece a few of the skewers at the end will either have to have 2 meatballs per skewer or 4 meatballs.

In a small bowl mix together olive oil, grated garlic, oregano and kosher salt.

Brush the mixture over the assembled skewers and add the skewers to your preheated grill. Grill for about 5 minutes per side or until the meatballs are warmed through and the vegetables are cooked.

Sprinkle the skewers with Parmesan cheese before serving.
