Irish Soda Bread French Toast

This Irish soda bread French toast is toasted until browned and topped with powdered sugar and fresh berries. Say hello to breakfast! You’re gonna love it!

Also, as much as I love the classic Thin Mint and Samoas my two favorites are Tagalongs (hellooooo peanut butter AND chocolate!) and Savannah Smiles.

If you have never had the second cookie it’s basically a crumbly shortbread cookie packed with TONS of lemon flavor and then covered in powdered sugar. It’s the type of cookie I want to eat with coffee….for breakfast.

I know. I shouldn’t eat sweets for breakfast but sometimes I can’t resist them.

If you’re not a fan of cookies for breakfast you could always go for a little French toast.

And if you’re feeling pretty St. Patrick’s Day festive you take that French toast and give it an Irish twist by using Irish soda bread.

Heck. Yes. 

Usually when I buy soda bread I just slice it, toast it, slather it in butter, and then eat it so fast it’s as if I’m scared someone will steal it off my plate.

However, this time around I wanted to do something a little different with my bread.

I decided to turn it into Irish soda bread and French toast.

If you’re feeling fancy you can even put in some Jameson with egg batter but it’s totally optional.

Optional meaning – if you were me you would not read this as optional. You would dump it in and go about your day happily knowing you starting your morning with Irish whiskey.

Ingredients

  • 1 loaf store bought raisin Irish soda bread
  • 2 large eggs
  • 1/4 cup half and half
  • 2 tablespoons brown sugar
  • 2 tablespoons Jameson Irish whiskey optional
  • 2 teaspoons vanilla bean paste
  • 1 teaspoon ground cinnamon
  • Unsalted butter
  • Maple syrup for topping
  • Powdered sugar for topping
  • Fresh berries for topping

Instructions

  • Sliced Irish soda bread into 1 inch thick slices and set aside.
  • In a shallow dish whisk together eggs, half and half, sugar, Jameson Irish whiskey (if using), vanilla bean paste and cinnamon.
  • Melt about 1 tablespoon butter in a 12 inch pan over medium heat.
  • Dip the sliced Irish soda bread into the cream mixture and add to the hot pan with melted butter. Cook until both sides are golden brown.
  • Continue cooking (adding more unsalted butter to the pan if needed) until all the French toast has been cooked.
  • Top with maple syrup, powdered sugar and berries if desired.
