Ok folks. It’s here, it’s finally here! Mac & Cheese Mania is live! Rachel {from the amazing blog Rachel Cooks} and I have been planning this event for months and I’m so happy it’s finally time for the big reveal. All this week Rachel and I will be sharing all new mac and cheese recipes on our blogs. Trust me, if you love cheese and pasta you’re going to love this week! If you’re wondering why we are doing this it’s because it’s both of our blogs anniversaries! This week I will been blogging for 5 years! I cannot believe it’s been that long! Trust me, when I started blogging I thought it would be a hobby that would last a few weeks. Luckily it stuck and now I have a full time career and a job I truly love. Thank you to all my awesome readers for making that possible!

    This is lite for me. Gluten free pasta mixed with cooked cauliflower. Add fat free cream cheese mixed with Dijon mustard with caramelized onions and minced garlic. Add in sharp cheddarand Greek yogurt. Top with gluten free garlic browned bread crumbs and bake at 350° for 30 min.

    I love an old fashioned custard style mac and cheese. This one is from Cotton Country Collection.

    1 c macaroni
    1 c grated cheese
    2 eggs
    2/3 c milk
    1/2 tsp salt
    1/4 tsp paprika
    cayenne to taste
    dry bread crumbs
    additional grated cheese

    Parboil mac. in salted water and drain. In a buttered casserole layer mac. and 1 c grated cheese. Beat eggs, milk and seasonings well. Pour over mac and cheese. Sprinkle with bread crumbs, dot with butter and top with additional grated cheese. Bake at 350 degrees for 20 min. or until knife inserted in middle comes clean. Serves 4.

    I love this mac and cheese casserole recipe that my mom has got from her mother, and she’s now taught it to me. It’s fairly simple, and nothing fancy (and that’s what makes it so great – I love simple comfort foods).
    You take one can sweet peas, one box mac and cheese (or shells and cheese, whichever you like better), one can of cream of mushroom soup, one can of tuna, and a tin of french fried onions.
    You prepare the mac and cheese to the box’s directions, with the exception of the boil time: Drain the pasta while still a little al dente. Then, mix the mac and cheese with the tuna, peas, soup, and half of the french fried onions. Ladle this mixture into a casserole dish, sprinkle the top with the remaining french fried onions, and bake in the oven for 10 minutes at 425. Voila, you have my mom’s mac and cheese casserole!

    Here’s my go to Mac & Cheese:
    I use Cavatappi noodles and skip the topping. Sometimes I add broccoli and bacon or something else from the fridge that is on the verge of rotting!
    The leftovers are awesome on a pizza skin.
    One of these days I am going to take some scoops, bread’m and pan fry them!

    1 cup low sodium chicken broth
    1/2 cup cream
    2 1/2 cups shredded colby cheese
    2 1/2 cups uncooked pasta
    1 teaspoon salt

    In a saucepan, melt butter over medium low heat; add the flour a little bit at a time whilst whisking to make a roux.
    Heat the broth.
    Next, add the broth to the roux, and stir with the whisk; this will thicken as it heats.
    Add a little cream, watching for the desired consistency.
    Bring 4 cups water to a boil in a separate pot; add salt and pasta.
    In the other pot, add shredded cheese a 1/4 of a cup at a time whilst stirring with a spoon. When you have about one cup of cheese in you can add the rest of the cheese.
    Cook the pasta until al dente; strain and combine with the cheese sauce.
    Pour the mix into a casserole and bake uncovered in a preheated oven set to 350°F for about 10 minutes.
    Keep an eye on the mac & cheese, you want it to brown around the edges and in patches on top.
    Remove and let stand for 10 minutes before serving. Enjoy!

    hands down, other than my annual Christmas Day Standing Rib Roast, my family ADORES these pork chops with garlic and wine from Pioneer woman. We make them with grape juice because I have an allergy to red wine, but they are BY FAR the yummiest things EVER.

    In fact, in looking for the recipe, I mentioned them and now my husband has me making them for dinner tonight!

    This is my favorite macaroni and cheese recipe courtesy of Food Network Kitchens- buffalo chicken macaroni and cheese.

    I’ve made this multiple times and it’s always a hit. The cheese sauce is amazing, the chicken gives a nice amount of heat without being overpowering, and it’s truly stick to your ribs food. A 9 X 13 pan of this weighs a good 5 pounds, at least that’s what it seems like to me. It usually takes us a few days to get through it all, but it’s just as good as a leftover meal as it is fresh. I omit the blue cheese because we don’t like it, but I’m sure if you enjoy it, it would taste great. I would also suggest adding 1/4 cup at a time of hot sauce, as 3//4 of a cup can really overpower the dish. We prefer using about 1/2 cup so that you can really taste the other flavors- plus Jack cheese adds heat as well.

    One Pot Mac & Cheese

    2 cups milk
    1 (12 oz) can evaporated milk
    1 egg
    1 tsp salt
    1/4 tsp pepper
    2 cups grated cheddar cheese
    2 cups uncooked elbow macaroni

    Spray the crockpot. Put milks, egg, salt & pepper in crockpot & whisk until combined. Add cheese & uncooked macaroni. Stir gently to mix.

    Turn crockpot on LOW & cook 3-4 hrs or until custard is set & macaroni is tender. Do not cook more than 4 hrs or the sides will bein to dry out. Serve immediately.

    Mine is usually done in 3 hrs. I also top wth a little more cheese just before serving (turn the crockpot off & add grated cheese to the top & then put lid back on – it will be all melty in 5-10 mins)

    My favorite recipe is Stuffed Manicotti from Bucca de Beppo. But, I add my own seasonings it it. As well as sometimes I add some spinach to the cheese stuffing. ……. ….. Thanks!
