No Bake Blueberry Cheesecake

This no bake blueberry cheesecake is perfect for hot summer days and can be decorated for any red, white and blue inspired party.

During the summer no bake cheesecake is my jam. Seriously, I don’t have to heat up my whole house so it immediately gets a big fat win in my book.

Plus because I’m usually super lazy I just pick up a few store made graham cracker crusts. I LOVE using the mini graham crackers crusts for parties because it’s so much easier to serve. Plus they fit PERFECTLY in disposable cupcake trays.

I made a pie eerily similar to this a few years ago but that pie called for sour cream and this is strictly creamy cheese, sweet luscious sweetened condensed milk, vanilla bean paste {my love!} and a little lemon juice.

This cheesecake is so easy you could make it everyday.

Er. Maybe not everyday. Then I would be getting hate mail about how your hips aren’t lying and not fitting into your shorts.

Because obviously we all know cheesecake is not something you cannot eat if it’s in the house.

Well, at least I can’t. If you can you must have some sort of super human willpower that you need to give me….immediately!

Oh and see those cute strawberry stars? They are totally optional but they make an awesome little Memorial Day or Fourth of July party cheesecake accessory.

True story. I brought these cheesecakes to a friends Memorial Day party and I heard a lady at the table behind me say “This cheesecake is delicious! Also, whoever made this must have too much time on their hands because they seriously cut strawberries into stars.”

Yeah, that’s me. The girl who cuts strawberries into stars.

No Bake Blueberry Cheesecake

This no bake blueberry cheesecake is perfect for hot summer days and can be decorated for any red, white and blue inspired party.

Yield: 9 inch cheesecake or 12 small cheesecakes

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes + resting time

Ingredients:

  • 8 ounces cream cheese, room temperature
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla bean paste
  • 1/3 cup fresh squeezed lemon juice
  • 1 (9-inch) graham cracker crust or 12 mini graham cracker crusts (store bought)
  • 1 cup fresh blueberries
  • 12 ounces wild blueberry jam
  • 6 large strawberries, tops removed and cut in half

Directions:

In the bowl of an electric mixer add cream cheese and sweetened condensed milk. Beat together until smooth.

Add in vanilla bean paste and lemon juice. Beat until combined.

Pour cream cheese mixture into either 9-inch pie crust or mini pie crusts.

Cover the pies in one layer of blueberries and let the mixture set up for at least 2 hours (the mini cheesecakes will set up a little bit faster) in the refrigerator.

Stir the wild blueberry jam to loosen it up and smooth on top of the blueberries.

Using a mini star shaped cookie cutter (or if you prefer to rock the freestyle cutting) cut out star shapes in the strawberries and top your cheesecake. This is a totally optional step but does tend to impress the hell out of people when you bring it to a party.

Keep the cheesecakes cold until serving.
