Open Face BBQ Chicken Burger with Peach Corn Salsa

This open face bbq chicken burger with peach corn salsa is the perfect summer burger. Deliciously spiced with the perfect balance of sweet and savory. Ground chicken mixed with smoked paprika, chili powder and bbq sauce all cooked up to perfection, served on Texas toast and topped with sweet and savory peach corn salsa, cotija cheese and crispy fried onions. You’ll have a hard time not wanting to eat this burger all summer long!

Ahhhhhhhh peach season! I think I need an intervention about my consumption of peaches. Every single time I go to the store I pick up a few and then eat them in like 2.2 seconds when I walk through the door. There is seriously nothing better than a fresh summer peach.

Obviously with my love for peaches I threw them into this burger. I made the most delicious salsa by combining fresh summer sweet corn, peaches, cilantro and just a squeeze of lime. Then I made a burger patty out of ground chicken, bbq sauce, cilantro and lots of smoked paprika. THEN I put all of that on top of a piece of Texas toast added on crumbled cotija cheese and a few crispy onion pieces.

Basically I just made the most rad burger of the summer. If this were an Oscar award winning movie I would be Rose, the burger would be Jack and I truly would never let go.  

I made this burger for Burger Month hosted by the lovely Kita of Girl Carnivore. Her only requirements were to make a burger that is delicious. I think I managed to do this. PLUS it’s open face so you can pile on the toppings and not feel bad about how messy you’re about to get. Simply bust out your fork and knife and start munching away.

Now I know burgers are usually served between 2 pieces of bread but this burger is best open face. And it’s not just any open burger it’s an open face burger on Texas toast. So it’s like double the delicious bread flavor.

Seriously, who wouldn’t want that?!

This open face bbq chicken burger with peach corn salsa is the perfect summer burger. Deliciously spiced with the perfect balance of sweet and savory. Ground chicken mixed with smoked paprika, chili powder and bbq sauce all cooked up to perfection, served on Texas toast and topped with sweet and savory peach corn salsa, cotija cheese and crispy fried onions. You'll have a hard time not wanting to eat this burger all summer long!

Yield: 6 burgers

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Ingredients:

For burgers: 

  • 1-1/2 pounds ground chicken
  • 1/3 cup chopped cilantro
  • 1/4 cup BBQ sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 6 pieces Texas toast
  • 1/3 cup crumbled cotija cheese
  • 6 tablespoons crunchy fried onions

For salsa:

  • 2 tablespoons unsalted butter
  • 2 cups sweet corn kernels
  • 2 peaches, pitted and small dice
  • 1/4 cup chopped cilantro
  • 1/2 lime
  • Kosher salt and pepper, to taste

Directions:

For burgers:
In a large bowl mix together ground chicken, cilantro, bbq sauce, smoked paprika, chile powder and kosher salt - form into 6 patties. (The mixture will probably be very sticky and looser than traditional burgers. It's ok because while they cook they will set up.)

Set a large non-stick pan over medium heat and add in 2 teaspoons olive oil. Once the oil is hot add in the patties and fry until bottom is brown, flip and continue cooking until the patties are fully cooked. The inside of the burger should be at least 165 degrees.

Toast the Texas toast according to box directions, top with chicken burger, salsa, cotija cheese an crunchy fried onions.

For salsa:
In a large skillet set over medium high heat add butter. Once the butter is melted and hot add in the sweet corn and saute for about 5 minutes until it starts to soften. Add in peaches and continue cooking just until the peaches soften.

Remove from the heat and toss in cilantro, squeeze of lime, salt and pepper.
