This peach feta salad with peach vinaigrette is the perfect way to celebrate summer. Baby greens, fresh peaches, feta, red onion, praline pecans and perfectly sweet peach puree vinaigrette.

I woke up the other day with a sinus infection. Seriously? I have never had a sinus infection before until last May and now I’m getting another one in less than 2 months? What the hell body. What. The. Hell. Luckily I’m going to the doctor today so she can either hop me up on antibiotics or tell me it’s viral and I just have to wait it out.

Whatever. She better give me drugs because my nose hurts so bad I can barely wear my glasses. I don’t play around with my eyesight. I gotta see yo!

In an attempt to get my sinus infection to go away I went out on the lake the other day with Gina. I thought maybe a day in the sun would somehow just kill the infection. Obviously my understanding of medical care is slim to none.

So while my infection is still going strong I did have a blast on the lake. I barely got in the water because I’m basically super high maintenance when it comes to nature BUT it was so gorgeous. We went out on the boat where I enjoyed the breeze and the undying urge to jump into the water. Of course my overthinking got the best of me and I ended up not jumping in the water. Sigh.

I wish I was one of those people who didn’t overthink EVERYTHING. These are the thoughts I had when I was thinking about jumping in the water.

As you can see I’m a bit of an over thinker. I like to think of every possible think that could go wrong and how I could fix it. Unfortunately for me the only fix I found to my problems was to just not get into the water. So I watch everyone be brave in the water while I sat on the boat drinking cheap beer and keeping Gina’s dog calm.

I’m such a winner.

After I got home I made myself this salad (2nd time eating this baby in 2 days!) and rubbed aloe all over my pink skin. If you’re looking for the perfect summer salad this is basically the thing of your dreams. It combines sweet summer peaches, salty feta cheese, sweet praline pecans and a totally delicious peach puree vinaigrette. If you don’t know how to make a peach puree it’s super simple – add 2 peaches to a blender and puree until smooth. That’s it!

How freaking easy is that?

Also if you’re watching your waistline this summer I’m happy to report I used Truvia in the vinaigrette to add just a touch of sweetness without all calories. The amount you add it totally dependent on the sweetness of your peaches so add a little at first and add more if needed or desired.

Peach Feta Salad with Peach Vinaigrette

This peach feta salad with peach vinaigrette is the perfect way to celebrate summer. Baby greens, fresh peaches, feta, red onion, praline pecans and perfectly sweet peach puree vinaigrette.

Ingredients:

For salad:

  • 6 cups mixed baby greens
  • 2 peaches, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup chopped praline pecans
  • 1/2 cup crumbled feta cheese

For vinaigrette:

  • 1/2 cup peach puree
  • 1-2 tablespoons white balsamic vinegar
  • 1/2 teaspoon Truvia Sweetener
  • 1/4 - 1/3 cup olive oil
  • Kosher salt and pepper, to taste

Directions:

For salad:
In a large salad bowl add mixed greens and top with peaches, red onion, chopped praline pecans and feta cheese.

Drizzle with desired amount of vinaigrette and toss to combine.

For vinaigrette:
In a small bowl whisk together peach puree, balsamic vinegar and Truvia.

Slowly drizzle in olive oil while whisking. If the mixture is too thick drizzle in a little more olive oil.

Season with kosher salt and pepper to taste.
