Pesto Chicken Caprese Pasta

Pasta, pasta, pasta, PASTA! You guys, this dish is crazy intense and is 100% worth every single carb filled bite. It’s not your average ho-hum tomato sauce and pasta – nope. This baby is packed full of pesto grilled chicken, blistered grape tomatoes, fresh mozzarella, and tons of basil. It’s basically like summer threw itself into this pasta and boy oh boy is it delicious.  

Now, I will warn you that this pasta makes a lot BUT that’s ok because you can just share it with the neighbors. In fact, my neighbors just had a little (super adorable and super cuddly) girl and I took over this whole dish of pasta for them to enjoy. I felt like I was carrying over 20 pounds of pasta but they didn’t mind. Who has time to cook when you have a baby? I swear if I ever had a child I would use that an excuse for errrrrything. “Oh, you expected me to clean today? I had a baby.” or maybe “Oh, I’m sorry you expect me to carry in all those groceries? I can’t. I had a baby.” I think you see where this is going. I would pretty much be out of commission until forever. 

This is also probably why I don’t have kids because I need to stay motivated to actually do work and live a responsible adult life. Adulting is so darn hard sometimes. Am I right? 

Also, can we talk about how I really don’t like carrying in all the groceries after I shop? I guess part of adulting is carrying it all in (and putting it away) BUT I load up each arm with so many bags it’s like I’m competing in my own at home CrossFit “load the bags up” challenge. Who needs a gym when you can just go around lugging in groceries? BUT one thing I’ll never complain about (well, ok maybe I complain sometimes) is grocery shopping. When I was a kid I would BEG my mom to let me come shopping because I weirdly found it fun. Of course half of the time she would deny me the right to shop because I would spend half of that time whining about how she NEVER would buy me all the sweet treats I wanted. I just don’t get why she was against buying me all the sugary pastry tarts I wanted. Ha, kidding. She was right. I was insane. 

However, now I’m an adult and I can buy all the things I desire! Except I don’t really because I’m not really about eating all that weird food. Seriously, how do they get the colors for some of that stuff? I probably don’t want to know. But it’s all good because I can get a pretty large selection of goodies from my local Stop & Shop. I love their Nature’s Promise products because they are either organic or free from artificial colors, flavor or preservatives. That means I can still indulge without being all “umm, what’s in this?” 

I don’t talk a lot about eating organic and that’s because I like to live a life of balance where I pick and choose what I think is most important to eat organic. I know shopping strictly organic can get costly. However,  iff you check out Nature’s Promise I guarantee you’ll be amazed at their prices. They are affordable so that means you’re getting good food for less money, YES!

For this dish, I settled on using 3 different Nature’s Promise products – thinly sliced chicken breast, canned diced tomatoes and fresh grape tomatoes. With just a few more ingredients I made the most amazing pasta EVER! I talked about that earlier so I think I’ll spare you the praise again. Seriously though I think it’s worth mentioning (again!) that you should make it. Talk about flavor!

Pesto Chicken Caprese Salad

This pesto chicken Caprese pasta is packed full of flavor and packed full of pesto grilled chicken, grape tomatoes, fresh mozzarella and lots of basil. You'll love this fresh pasta not only because it's fresh but because it's easy and ready in just 30 minutes!

Yield: 4-6 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes


For chicken: 

  • 4 boneless skinless chicken cutlets
  • 1/4 cup store-bought pesto
  • Kosher salt and pepper, to taste 

For pasta: 

  • 1 pint grape tomatoes 
  • 1 (14.5 ounce) can diced tomatoes
  • 3 cloves garlic, minced 
  • 1 pound pasta, cooked 
  • 1 pound small mozzarella balls
  • 1/3 cup pesto 
  • 1/3 cup chiffonade basil 
  • 2 cups reserved pasta water
  • Grated parm, for topping
  • Crushed red pepper flakes, for topping
  • Balsamic glaze, for topping

For balsamic glaze:

  • 1 cup balsamic vinegar


Coat chicken in pesto and desired amount of kosher salt and pepper. Grill until fully cooked, set aside.

In a large high-sided skillet add 1 tablespoon olive oil and set over medium-high heat. Once hot add in the tomatoes blistering their skin until they just start to soften. Remove from the skillet and set aside.

To the same skillet add diced tomatoes and garlic. Simmer just for a few minutes just to combine flavors. Add in the cooked pasta and toss. Moisten the pasta with reserved pasta water if needed. You can also drizzle on a bit of olive oil or add more pesto if you desire.

Add in blistered tomatoes, mozzarella balls and fresh basil. Toss to combine.

Sliced chicken and toss with pasta.

If desired, sprinkle top with grated parm, crushed red pepper flakes and balsamic glaze.

For balsamic glaze:
Add balsamic vinegar to a small pan and set over medium-high heat. Once the vinegar starts to bubble turn the heat down to low and let simmer until thick and syrupy. Make sure to whisk or stir your glaze while you're cooking it down. DO NOT leave this unattended. You can go from perfect glaze to burn smelly mess in seconds. This whole process should take about 10 minutes and leave you with about 1/4 cup glaze.

Note: if the pasta gets dry just add in more reserved pasta water or moisten with more olive oil or pesto. Also, the small mozzarella balls I used are about the size of marbles.
